Tuna and corn salad

Tuna and corn salad is usually served cold at lunch as a simple, filling meal. Tuna in oil, sweet corn, tomatoes and green onions come together in a fresh-tasting salad with a hint of lemon. I like to cut the green onions into larger pieces, so you can taste them among the tomatoes. Prep: 15 minutes. Cook: 0 minutes. Total time: 15 minutes. Servings: 2. Approximately 325 kcal and 25 g protein per serving.
Ingredients
- 1 can (160 g) tuna chunks in oil
- 285 g drained sweet corn
- 3 green onions (45 g)
- 2 medium tomatoes (300 g)
- 40 g lettuce leaves (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 15 ml lemon juice
Preparation
1. Chop the green onions into large pieces so you can taste them in the salad. Cut the tomatoes into bite-sized pieces. 2. Drain the corn. Leave the tuna in its can and use the oil from it. 3. Put the tuna with its oil, corn and vegetables in a bowl. If using lettuce, tear the leaves into strips and add them. 4. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper, then drizzle with 15 ml lemon juice.
Notes
I used Sun Food cans; another time I also added lettuce leaves torn into strips, and I really liked that version. It keeps covered in the fridge for up to 3 days, although the tomatoes gradually release liquid and soften the corn. I serve it with toasted bread, which is good for mopping up the oil and juices left in the bowl. For a less watery salad, remove the seedy part from very juicy tomatoes before cutting them. Canned corn can be saltier from one brand to another, so taste the salad before adding more salt. If the tomatoes are already tart, add the lemon juice gradually. Add the lettuce leaves just before serving, torn into strips, so they don't soften in the juices in the bowl. Chunks of tuna keep more texture than flaked tuna, if you want them to stand out in the mix.
Frequently asked questions
Can I use tuna in water?
Yes. Use 160 g drained tuna and add 1 tablespoon olive oil.
How do I keep the salad from releasing too much liquid?
For very juicy tomatoes, remove the seedy center before cutting them; the remaining flesh holds its shape better in the bowl.
Can I replace the green onions with red onion?
Yes, use 30 g thinly sliced red onion instead of the 3 green onions.
Can I use cherry tomatoes?
Yes, use 250 g and cut them in half so they mix easily with the corn and tuna.
