Sheikh's Tajine
In a pot unable to hold all the flavors that gather around it, you start by sautéing the onion and carrot in hot oil. Choose a large onion, as it will add a sweet taste, perfect for the base of your dish. When the onion becomes translucent and the carrot releases its sweetness, add a handful of freshly chopped parsley and your favorite spices: a pinch of turmeric, a little cumin, and a dash of ground black pepper. Stir everything with a wooden spoon, ensuring that the flavors combine perfectly.
After five minutes of gently stirring, the moment comes to add the ingredients that will transform this dish into a wonder. Add the well-drained and washed beans and chickpeas, along with a few finely chopped garlic cloves. The garlic will bring an intense note and will perfectly complement the sweetness of the vegetables. Don’t forget to add the potato, diced, to provide consistency and extra nourishment to this dish.
With all the ingredients in the pot, you can’t wait any longer and pour the mixture over the heat. Add a few slices of lemon that you have on hand, to bring a pleasant acidity that will balance the flavors. Then, slam the lid on the pot and let everything simmer on low heat for an hour. During this time, the flavors will intertwine, and the aroma of spices and the sweet-sour sensations will fill the air around you.
After the time has passed, lift the lid and let yourself be carried away by the incredible aroma that will greet you. Now that’s a tajine! You’ll realize you’ve created a wonderful dish that deserves to be savored leisurely, without rush. So, prepare yourself a generous portion, because these dishes are not shared with just anyone. Enjoy your creation and relish every bite full of flavor and warmth!
Ingredients: We are on the twenty-fourth evening of the month of November. The moon hangs in a corner of the sky, ready to fall from boredom. The fortune teller in the stars is not in the palace. The sheikh has no song from the lute either. He is also hungry. There was no meat because the game had perished around and the merchants had only brought fruit. He thinks to take a stroll to the palace kitchen to see what there is to eat. There, someone had placed on a large pink board: three onions, a head of garlic, a potato, four carrots, a handful of green beans, chickpeas, olives, and plums likewise, chopped green parsley, four cauliflower florets the size of a fist, clear oil, and crushed tomatoes. There was also cumin, coriander, and ground cinnamon. Not to mention hot paprika! Well then... the sheikh scratched his head through his turban... as if not everyone had perished, he mumbled to himself... He looked this way and that so no one would see him, and since he was very hungry, he began to cook.
