To prepare a delicious and healthy dish, we start by gathering all the necessary ingredients, making sure we have a large pot handy, ideal for cooking all the vegetables together. We begin by pouring all the oil into the pot and, over low heat, adding the finely chopped onion. It will start to sauté, releasing its aroma, followed by the grated carrot and diced peppers. We let the mixture sauté for 3-4 minutes, stirring occasionally to ensure the vegetables do not stick to the bottom of the pot.

Once the onion becomes translucent, we add the potatoes, cut into suitable cubes, and continue cooking for another 5 minutes, so they soften a bit. This step is essential to create a rich flavor base. Next, we add the rest of the vegetables: fresh or frozen peas, beans, diced eggplant, and the apple, which will add a touch of sweetness. These ingredients will contribute to a complex flavor and interesting texture.

After adding all the vegetables, we add bay leaves, salt, and pepper to taste, and pour in 500 ml of warm water. It is important to mix all the ingredients well to ensure that the salt and spices are evenly distributed. We cover the pot with a lid and let it simmer on low heat for 30 minutes. During this time, it is important not to stir with a spoon, to avoid breaking the vegetables, but to gently shake the pot from time to time, as with stuffed cabbage, to ensure even cooking.

After 30 minutes, we lift the lid and add the tomato juice, which will provide a pleasant acidity and fresh taste. We also add the finely chopped or crushed garlic, which will enhance the aroma of the dish. Now, the pot is ready to be transferred to the oven, where we let it bake on low heat for 25-30 minutes. Here, all the flavors will concentrate, and the sauce will reduce, becoming delicious and thick. It is ready when we notice that the sauce has reduced enough, and the vegetables are tender but not too mushy. Enjoy this dish full of vitamins and flavor, perfect for a family meal!
