We carefully raise the slices of bacon, ensuring that each piece is evenly cut to fry perfectly. We then put them in the pan over medium heat, letting them brown nicely. While the onion is sautéing, we turn our attention to the tomatoes. We carefully slice them, ensuring that each slice is juicy and full of flavor. Once the onion has taken on a pleasant color, we add the sliced tomatoes, mixing well.

We sprinkle chopped fresh parsley on top, which will add a touch of freshness, and a teaspoon of marjoram, a spice that perfectly complements this dish. We add salt and pepper to taste, letting the ingredients meld together for 1-2 minutes. We gently stir to ensure that every flavor blends harmoniously.

Then, we put the fried bacon slices back into the pan and mix again, so that each piece is covered with the delicious sauce formed. The highlight of the recipe comes now: we crack the eggs on top of the mixture, being careful not to mix them. We let the eggs cook quietly, and from time to time, we gently shake the pan to help the egg whites set without breaking the yolks.

When the egg whites are well set and have a firm texture, we sprinkle a little salt on top and remove the pan from the heat, being careful to keep the yolks soft and creamy. We carefully portion the omelet onto plates, admiring its fluffy texture and vibrant colors. We serve it alongside a fresh tomato salad or other favorite salads, adding a note of freshness to the dish.
