To prepare this delicious recipe for breaded cabbage, we will start by preparing the beer batter, which will need to rest for at least 30 minutes. This step is essential as it allows the ingredients to combine perfectly, resulting in a light and airy batter. Meanwhile, we take care of the cabbage. We remove the wilted leaves and the core, making sure to leave it intact. The cabbage is cut into thick slices of about 2 cm, similar to watermelon slices, to fry evenly and maintain a pleasant texture.

The next step is boiling the cabbage slices. We add them to a pot of boiling water, seasoned with salt, and let them cook for about 10 minutes. It is important not to let them become too soft, as we want them to remain crunchy and not fall apart during frying. After boiling, we drain the cabbage and let it cool, ensuring that the excess water is removed.

If you choose to use eggs in the recipe, this is the ideal time to prepare the batter for breading. Beat the egg whites with a pinch of salt until they become frothy, then incorporate the yolks and gradually add the flour. You can also add a bit of pepper for extra flavor, but it is optional. The batter should be homogeneous and slightly thicker, ready to coat the cabbage slices.

The cabbage slices are dipped in the batter, ensuring they are evenly coated, and then fried in hot oil. If you choose the beer batter option, keep the heat at a low intensity to allow the batter to coagulate well, considering that this type of batter behaves differently, similar to pancake batter. Once the cabbage is fried, remove the slices to a platter lined with absorbent paper to eliminate excess oil.

To serve, you can accompany the breaded cabbage with a fresh seasonal salad, which will add a touch of freshness to the dish. If you opted for the egg version, don’t forget to grate some cheese or telemea on top, and for a flavorful finish, sprinkle a little fresh dill.  Ingredients: a small and dense cabbage, 3-4 eggs (depending on the size of the cabbage), 3-4 tablespoons of flour, salt, pepper, oil for frying, grated cheese or telemea, fresh dill. In the fasting version, I used beer batter: about 350ml of beer, a few tablespoons of flour (7 - to obtain a thicker batter than that for pancakes), 1/2 packet of baking powder, salt, optional pepper.
