To prepare a delicious cauliflower salad, start by choosing a fresh cauliflower with small florets and a uniform white color. Make sure it has no spots or yellowed parts, as these are signs of an older cauliflower. Once you have selected the cauliflower, wash it well under a stream of cold water to remove any impurities.

Put a large pot of water on the stove and add a tablespoon of salt to flavor the cauliflower while boiling. When the water starts to boil, add the cauliflower florets and let them boil for about 5-7 minutes, until they become tender, but not so much that they turn into puree. After boiling, use a strainer to drain the water, then let them cool completely in a bowl.

Once the cauliflower has cooled, it is important to remove the excess water. You can do this by gently pressing the florets with a spatula or with your hands, being careful not to crush them too hard. Once you have removed the water, take a fork and start mashing the cauliflower in a bowl until you achieve a slightly grainy consistency, but not a complete puree.

Next, prepare the mayonnaise. You can use store-bought mayonnaise or make it at home from an egg yolk, oil, mustard, and lemon juice. Then, add the mayonnaise over the mashed cauliflower and mix well to combine the flavors.

Add finely chopped fresh dill, which will give a refreshing taste and a note of freshness to your salad. Don't forget to season with salt and pepper to taste, to bring all the flavors into balance.

Gently mix everything so that the ingredients are well incorporated, but do not crush the cauliflower too much. After you finish mixing, you can let the salad sit in the refrigerator for about 30 minutes, so the flavors blend perfectly. When serving, you can add a few fresh dill leaves on top for a more attractive appearance. This cauliflower salad is ideal as an appetizer or side dish, being a healthy and tasty option.
