Stuffed peppers with cabbage are a delicacy that brings a touch of freshness and flavor to winter meals, making them an excellent choice for diversifying the menu during the cold season. This recipe is perfect for those who love pickles and want to preserve the vibrant taste of fresh vegetables for later.

To prepare these stuffed peppers, you will need about 2 kg of bell peppers and sweet peppers, in addition to a kilogram of cabbage that you will finely chop. It is ideal to choose medium-sized peppers that can be easily filled, but also have a nice shape to look attractive in the jar. The cabbage, on the other hand, should be fresh and crunchy to provide a pleasant texture and intense flavor.

Start by washing the peppers and sweet peppers well under cold running water, then cut off their tops, removing the seeds and internal veins. After you have cleaned the vegetables, it’s time to deal with the cabbage. Finely chop the cabbage and place it in a large bowl. Add salt (about 2-3 tablespoons) to help with the pickling process and mix well so that the salt is evenly distributed. Let the cabbage sit for 30 minutes to soften slightly and release its juices.

Once the cabbage has softened, fill each pepper with the cabbage mixture, being careful not to overcrowd them but to fill them evenly, leaving a little space for expansion. Place the stuffed peppers in a sterilized 8-liter jar, alternating between peppers and a few slices of sweet pepper to enrich the flavors. After filling the jar, it is important to prepare a brine from water and salt (about 1 liter of water to 100 g of salt) that you will pour over the peppers, ensuring that the vegetables are completely covered.

To prevent mold formation, you can place a weight (for example, a small bowl of water) on top of the vegetables so that they remain submerged in the brine. Close the jar with a lid and leave it in a cool, dark place for a few weeks, during which time the peppers will ferment and develop a delicious flavor. After about a month, you can start enjoying these tasty pickles.

Stuffed peppers with cabbage are not only an excellent choice for a side dish but also a delicacy that can be served as an appetizer alongside cheese or charcuterie platters. Enjoy them with a slice of fresh bread and a glass of wine, and you will turn any winter meal into a celebration of flavors!
