Two-cheese pasta bake

The pasta is drained after 6 minutes, while it is still firm; the two-cheese pasta bake sets in the oven under strips of cheese. The middle holds together, and the cheese browns on top; serve it hot or cold, on its own, with sour cream or jam. I’m not especially keen on it, but every now and then I eat it cold with sour cream. Preparation: 15 minutes. Cooking: 36 minutes. Total time: 51 minutes. Serves: 4. Approximately 600 kcal and 25 g protein per serving.
Ingredients
- 2000 ml water
- 200 g Divella pasta
- 100 g aged sheep’s cheese
- 100 g goat cheese
- 3 eggs
- 75 g soft butter
- 10 g butter
- 2 slices cheese
Preparation
1. Bring 2000 ml water to a boil. When it boils, add the pasta and cook for 6 minutes, until still firm; then drain well. 2. Grate the sheep’s cheese and goat cheese using the large holes of a grater. Mix them with the eggs and 75 g soft butter until smooth. 3. Fold the drained pasta into the cheese mixture. 4. Heat the oven to 180°C. Grease an ovenproof glass dish with 10 g butter and add the mixture. Cut the cheese slices into strips and arrange them on top. 5. Bake for about 30 minutes, until the cheese is browned and the mixture has set.
Notes
Cold, you can eat it with jam; hot, serve it with sour cream or on its own. Aged sheep’s cheese can be very salty, so taste it before mixing it in and choose one that won’t overpower the goat cheese. If the goat cheese is soft and doesn’t grate well, leave it in the fridge until it firms up a little. Short, thick pasta holds its shape better in the dish, while thinner pasta softens more quickly as it bakes. Keep it covered in the fridge and eat within 3 days. For a gluten-free version, use 200 g gluten-free pasta and cook it for the time stated on the package; the bake still contains dairy and eggs, and the regular version also contains gluten.
Frequently asked questions
Can I replace the goat cheese with farmer’s cheese?
Yes, use 100 g well-drained farmer’s cheese. If it’s wet, leave it in a sieve for 30 minutes before mixing it in.
Why does it fall apart when I cut it?
If the middle is still wobbly after 30 minutes, bake it for another 5 minutes at 180°C, until it sets.
Can I use fresh pasta instead of dried?
Yes, use 200 g and boil it for 2 minutes before draining, just until it stays firm.
