Spaghetti with tomato sauce and beef

Pasta/Pizza - Spaghetti with tomato sauce and beef by Filofteia J. - Recipia

Spaghetti with tomato sauce and beef, with mushrooms and onion, the sauce simmers for about an hour until the meat softens. The meat cooks slowly in the tomato sauce and tomato paste, and at the end the sauce is thickened with a little flour mixed with water. I stop pouring the sauce when the pasta is only lightly coated, otherwise it gets soggy. Preparation: 20 minutes. Cooking: 82 minutes. Total time: 102 minutes. Servings: 3. About 970 kcal and 54 g protein per serving.

Ingredients

  • 400 g spaghetti
  • 1500 ml water
  • 4 tablespoons oil
  • 2 medium onions (300 g)
  • 450 g beef round
  • 150 g champignon mushrooms
  • 3 medium tomatoes (450 g)
  • 4 garlic cloves
  • 4 tablespoons tomato paste
  • 15 g parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 250 ml water
  • 4 tablespoons water
  • 3 tablespoons flour
  • 50 g grated cheese

Preparation

1. Finely chop the onion and fry it for 5 minutes in 2 tablespoons of oil, until it turns glassy. 2. Cut the meat into small pieces, dry it with paper towels without washing it, then put it on top of the onion. 3. Add the washed mushrooms, cut into cubes, and 125 ml water. Stir and leave on low heat for 50 minutes, until the meat softens and can be cut easily with a spoon. 4. Meanwhile, dice the tomatoes and fry them for 5 minutes in 2 tablespoons of oil, in another pan, until soft. 5. Put the tomatoes over the meat and mushrooms, then add the tomato paste, the remaining 125 ml water, finely chopped garlic, chopped parsley, thyme, salt and pepper. Stir well. 6. Mix 4 tablespoons water with 3 tablespoons flour until it becomes a paste without lumps, then pour it into the sauce and stir. Leave the sauce on the heat for 12 minutes, stirring from time to time, until it thickens slightly. 7. While the sauce simmers, put the spaghetti to boil in 1500 ml water, following the package instructions (usually 10 minutes), then drain it. 8. Serve the spaghetti with the sauce over it and grated cheese on top, to taste.

Notes

The sauce keeps up to 3 days in the fridge, in a closed container, and is reheated over low heat with a little water. Cook the pasta only when the sauce is nearly ready, so it does not wait in the colander. It goes well with a glass of light red wine. The field mushrooms were mine, but store-bought cultivated mushrooms work just as well. The beef round should be tender when you cut it with a spoon, and if it is not yet, leave it on the heat a little longer with some water. If the sauce thickens too much while it stands, add a spoonful of hot water. For the gluten-free version, replace the flour with 1 and a half tablespoons of cornstarch, mixed in 2 tablespoons of cold water, and use gluten-free spaghetti. The pasta and flour contain gluten, and the cheese contains milk.

Frequently asked questions

Can I use ground beef instead of beef pieces?

Yes, 450 g ground beef browns in the pan for 8 minutes, instead of the 50 minutes of simmering for pieces.

Why is the sauce lumpy?

Usually the flour went into the sauce without being well diluted. If lumps formed, remove them with a spoon or pass the sauce through a fine sieve.

What can I use instead of mushrooms?

You can use 150 g zucchini cut into cubes, fried for 5 minutes in 2 tablespoons of oil before the meat.
