Homemade Tagliatelle with Cream and Cheese Sauce

Making homemade tagliatelle is a satisfying culinary experience that takes us back in time, evoking memories from traditional kitchens. These fresh pasta, cooked with a creamy sauce of sour cream and cheese, are not just a dish, but a true celebration of flavor! So, let's embark on this delicious recipe together.

Total preparation time: 40 minutes
Servings: 4

Ingredients:

For the tagliatelle:
- 2 fresh eggs
- 150 g flour (you can use wheat flour or type 00 flour for a finer texture)
- A pinch of salt

For the sauce:
- 1 medium onion
- 3 garlic cloves
- 250 g sour cream (high-fat sour cream is ideal for a creamier texture)
- 200 g cheese (choose a quality cheese that melts well)
- Salt and pepper to taste
- 2 tablespoons olive oil

Preparation:

1. Making the tagliatelle:
- In a large bowl, crack the 2 eggs and add a pinch of salt. Gently mix with a fork.
- Sift the flour onto a clean surface or into a bowl. Make a well in the center of the flour, like a volcano, and pour the eggs into this well.
- Start incorporating the flour into the eggs, mixing with a fork or your fingers, until you obtain a compact dough. If necessary, you can add a little water, but be careful not to make the dough too wet.
- Knead the dough for about 10 minutes, until it becomes smooth and elastic. Cover it with a damp towel or plastic wrap, letting it rest for 10-15 minutes.
- After resting, sprinkle flour on the work surface and roll out the dough into a thin sheet, using a rolling pin or a pasta machine. If using a machine, start with the thickest setting and gradually reduce the thickness.
- Once you have the desired sheet, roll it tightly and cut it into strips about 1 cm wide. Place the pasta strips on a floured surface to prevent sticking. Let them dry for a few minutes.

2. Boiling the pasta:
- Bring a large pot of salted water to a boil. Once the water is boiling, add the tagliatelle and cook for about 2 minutes, or until they rise to the surface. These fresh pasta do not require much cooking time!
- After boiling, drain them well in a colander, being careful to shake off any excess flour.

3. Making the sauce:
- In a large skillet, heat the 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 2-3 minutes. Then, add the minced garlic and continue to sauté for another minute, being careful not to burn it.
- Reduce the heat and add the sour cream, mixing well. Let the sauce simmer gently for a few minutes, then add the grated cheese. Stir constantly until the cheese melts completely and the sauce becomes creamy.
- Adjust the taste with salt and pepper as desired. If the sauce is too thick, you can add a few tablespoons of the pasta cooking water to thin it out.

4. Finishing the dish:
- Add the cooked tagliatelle to the skillet with the creamy sauce and mix well, ensuring the pasta is evenly coated with the sauce. Let them warm together for a minute.
- Serve the tagliatelle hot, possibly with a little grated cheese on top and a sprinkle of freshly ground pepper. These pasta are excellent alongside a garlic-infused chicken stew, which will perfectly complement the flavors!

Practical tips:
- If you want to experiment with flavors, try adding a few fresh basil leaves or chopped parsley to the sauce.
- Instead of cheese, you can use parmesan for a stronger taste. If you want a spicier sauce, add a pinch of chili pepper.
- You can even add vegetables like spinach or mushrooms to the sauce for a healthier and heartier option.
