To prepare a delicious recipe for stuffed peppers with fish, we will start by taking care of the main ingredient: the fish. If you have chosen a whole fish, the first step is to clean it of scales, using a special knife or a fish cleaning tool. Make sure to also remove the intestines by cutting off the head, tail, and fins. After this step, wash the fish well under a stream of cold water to remove any impurities. The fish meat should be cleaned of bones so that you obtain a homogeneous mixture. Use a meat grinder to mince the fish, then keep it cold to prevent spoilage.

Next, we will take care of the vegetables. Clean and wash all the necessary vegetables. For the peppers, cut off the tops and remove the seeds. Chop the onion finely, and mince the parsley. The tomatoes will be prepared by cutting off a cap that you will use later to cover the peppers, while the rest will be diced into small cubes. In a frying pan, heat a little oil and add the chopped onion along with a tablespoon of salt, sautéing until they become translucent. Then, add the rice and tomato paste, stirring constantly for 2-3 minutes.

After mixing, pour in a cup of water and let it simmer on low heat, stirring occasionally, until the rice swells and the liquid is absorbed. Allow the resulting mixture to cool slightly, then mix it with the minced fish meat, adding the freshly chopped parsley. Season the filling with salt and pepper to taste.

Now it’s time to stuff the peppers. Each pepper is generously filled with the meat and vegetable mixture, and on top of each, a cap made from tomato slices is placed. Arrange the peppers in a previously greased baking dish with a little oil, and among them, add the diced tomatoes, tomato juice, and water in equal proportions. If you like, you can also stuff some hollowed-out tomatoes, which will add a wonderful flavor to the dish. Sprinkle more chopped parsley, salt, and pepper, then place the dish in the preheated oven at 180-200 degrees Celsius.

Let the peppers bake for about 60 minutes, or until they become nicely browned and well-cooked. The delicious aroma that will fill your kitchen will surely be a sign that the recipe has succeeded! Serve them warm, alongside a fresh salad or a side of rice, and enjoy a healthy and tasty meal!
