- 1 kg of shrimp in shell (preferably, but you can also use peeled shrimp)
- 6-7 tablespoons of olive oil (for cooking)
- 7 tablespoons of olive oil (for the sauce)
- Juice of 1 fresh lemon
- 1 larger clove of garlic
- A handful of fresh green parsley

Preparation instructions:

1. Preparing the shrimp:
Start by washing the shrimp well under cold running water. Let them drain in a bowl for a few minutes. If using shrimp in shell, they will have a crunchy texture and intense flavor, but if you prefer peeled shrimp, you can opt for those.

2. Preparing the sauce:
In a small bowl, combine the 7 tablespoons of olive oil, the freshly squeezed lemon juice, the clove of garlic sliced thinly, and the finely chopped parsley. Use a fork to mix all the ingredients until you achieve a smooth emulsion, similar to a cream. Taste the sauce and adjust it to your liking - add more garlic if you prefer a stronger flavor.

3. Sautéing the shrimp:
