Whole Grain Breads with Seeds
To prepare a delicious and healthy bread, we start by activating the yeast. In a small container, dissolve the yeast in 100 ml of warm water, mixed with a teaspoon of sugar and 3-4 tablespoons of whole wheat flour. This mixture will need about 15-20 minutes to start the fermentation process, during which the yeast will swell and become frothy.
Meanwhile, in the mixing bowl, combine the whole wheat flour from Boromir with the whole grain flour from Solaris. Add a teaspoon of salt, which will enhance the flavor of the bread and help develop a better texture. Once the yeast has risen, pour the mixture over the flour, followed by warm water and olive oil, which will give the bread a distinct flavor. Knead the dough until it becomes soft and non-sticky, a process that can take about 10-15 minutes. This step is essential for developing gluten, which will give the bread an airy structure.
After the dough is well kneaded, cover it with plastic wrap or a clean towel and let it rise in a warm place for 2-3 hours. It is important to protect the dough from drafts to allow for even rising. Once the dough has doubled in volume, divide it into 10-12 balls, which will be shaped into elongated forms. These will become our small breads.
Each small bread will be dipped in a bowl of water, then in the Omega Forte seed mix from Solaris, so the seeds will stick perfectly to the surface of the dough. This step not only adds an attractive appearance but also provides important nutritional benefits. Place all the formed breads on a baking tray, where they will be covered with a kitchen towel to rise for another hour.
After they have risen, preheat the oven, and place the tray with the small breads in the preheated oven at moderate heat for about 50 minutes. To achieve a crispy crust, place a bowl of water in the oven, generating moisture. This will help form a golden and crispy crust while keeping the inside fluffy and soft. After the baking time has expired, take the small breads out of the oven and let them cool on a rack. Enjoy your meal!
