Stuffed Turkey Thighs
We wash and wipe the meat pulp, making sure it is clean and ready to be deboned. With a sharp knife, we debone the pulp and adjust it to give it a rectangular shape, so it will be easy to roll later. We generously season it with salt and pepper to give it a pleasant taste from the start.
In a pan, we heat a little oil and add the diced bacon. We let it brown slightly to bring out its flavors, then set it aside. In the same pan, we add finely chopped onion and crushed garlic, allowing them to sauté until they become translucent and release their aromas. We then add the raisins, which will bring a sweet contrast, the beaten egg, chopped parsley, and crushed nuts. Finally, we add the concentrated broth, mixing all the ingredients well to form a homogeneous and delicious filling.
The previously prepared meat is brushed with butter over its entire surface, and then the filling is placed along its length. We carefully roll the meat, ensuring that the filling does not escape during baking. After obtaining a tight roll, we tie it well with kitchen twine, making sure everything is securely closed. We place the roll in a baking tray lined with foil to help retain the juices during baking.
For an attractive appearance and intense aroma, we brush the roll with paprika, which will give it a beautiful color and exceptional taste. On top of the roll, we place a few pieces of butter that will melt during baking, adding extra flavor. We wrap the roll in foil, covering it well to prevent steam from escaping.
The oven should be preheated, and the roll is placed in the oven to bake. We let it cook for about an hour, then remove the foil on top to allow the roll to brown nicely. We check if it is done using a long toothpick or a thin knife; if the juice that comes out is clear, with no trace of red, the roll is perfectly cooked.
The final result is a delicious roll with an exceptional taste and a very attractive appearance that will impress anyone who serves it. It is an excellent choice for festive meals or for a special family dinner!
Ingredients: A large turkey thigh, salt and pepper for the stuffing (all finely chopped): a smaller onion about 50-100 g, smoked bacon, 3-4 cloves of garlic, a handful of raisins, 1 egg, a few nuts (kernel), 50 g butter (I didn't have enough and used tube butter), a bunch of parsley, thyme or other spices to taste, 1/2 cube Galina Blanca.
