Pumpkin buñuelos, also known as pumpkin doughnuts, are a traditional delicacy from Spain, especially appreciated in the cold season. This recipe is simple yet full of flavor, perfect for enjoying with loved ones. The basic ingredients are pumpkin, egg, flour, and sugar, but the version I will present today is made with baking powder, which makes it quick and easy to prepare. To start, you need 125 grams of pumpkin. You can prepare the pumpkin puree in several ways: either by boiling, in which case it is recommended to keep the water in which it boiled, or by baking in the oven or microwave, where it will cook in about 10 minutes, covered. Once the pumpkin is ready, scoop the flesh from the skin with a spoon and transfer it to a bowl. Add all the sugar to the bowl and use the back of the spoon to mash the mixture until the sugar melts and you obtain a smooth paste. Then, incorporate the beaten egg and grated lemon zest, mixing well until homogeneous. In another bowl, sift the flour together with the baking powder. Gradually add the pumpkin puree mixture, stirring until you get a soft composition that can be poured with a spoon. If the dough seems too thick, you can thin it out with a spoon or two of the water in which the pumpkin boiled or with a little milk. I chose to add a spoonful of yogurt for extra creaminess. In a deep pot, heat the oil. When the oil is well heated, use a teaspoon to take portions of the dough and carefully add them to the hot oil. Make sure not to add too many doughnuts at once, to allow them to cook evenly and to avoid overcrowding. The doughnuts will start to rise and brown, and the aroma will fill the entire room. When they are ready, remove them with a spatula and place them on a paper towel to absorb the excess oil. Then, quickly roll them in granulated sugar, vanilla or not, depending on your preferences. Pumpkin buñuelos are served hot but are also delicious cold. They are ideal alongside a cup of hot chocolate or a milky coffee, perfect for a cozy afternoon.
