To create a perfect dough, we start by gathering the necessary ingredients in a large diameter bowl. We add high-quality flour, salt, and yeast. It is important to ensure that the salt does not come into direct contact with the yeast, as the latter can be inhibited, and the dough will not rise properly. Therefore, we position the salt away from the yeast. Once we have completed this step, we gradually add lukewarm water and begin to mix the ingredients with our hands. As we mix, we observe how a soft and sticky dough forms, full of potential.

After obtaining a homogeneous mass, we add cumin and caraway seeds, which will provide a distinct and aromatic flavor to the dough. We continue to knead the dough, ensuring that the seeds are well incorporated. Once the dough becomes elastic and smooth, we shape it into a beautiful sphere. We place this sphere on a lightly floured work surface and divide it into four equal parts. Each piece of dough is shaped into small spheres, which will become the base of our delicious preparations.

We cover these dough spheres with a clean towel and let them rise for an hour at room temperature, in a warm place, away from drafts. This step is essential as it allows the yeast to act and the dough to double in volume. Once they have risen, we return to the lightly floured work surface, where we place each dough sphere. Using a floured rolling pin, we roll each sphere into a circle about 25 cm in diameter, taking care to keep the rest of the spheres covered to prevent them from drying out.

After obtaining the dough circles, we cover them again with a towel and let them rise for 5 minutes. This step will help achieve a light and fluffy texture. In the meantime, we prepare our non-stick pan, adding a few drops of olive oil, which we spread evenly over the surface of the pan with the help of an absorbent paper towel. Now, we are ready to bake each piece of dough, being careful to cook them over medium heat on both sides, so that we achieve a golden and crispy crust, as well as a soft and fluffy interior. Each bite will be an explosion of flavors, and the final dish will be truly delicious.

 Ingredients: - 480 g of freshly sifted white flour and additionally flour for dusting the work surface - 9 g of finely ground sea salt - 15 g of fresh yeast or 4.2 g of dry yeast - 300 ml of neutral water at touch (you may need a larger amount of water) - 1 teaspoon of cumin seeds (Cuminum cyminum) - 1 teaspoon of caraway seeds (Carum carvi) - 1 tablespoon of olive oil
