Meat pie
To prepare a delicious and savory recipe, we start by making sure we have all the necessary ingredients at hand. The first step is to thoroughly mix the margarine, which should be taken out of the refrigerator a few hours beforehand to soften, together with a fresh egg. It is important to ensure that the margarine and egg are well incorporated, resulting in a uniform composition. Then, we add the sour cream, vinegar, salt, and gradually the flour, mixing carefully until we obtain a homogeneous and smooth dough. It is not necessary to knead the dough, but simply cover it with plastic wrap and let it rest in the refrigerator for an hour. This step is essential, as it allows the gluten to relax, facilitating the subsequent rolling out of the dough.
Meanwhile, we take care of the filling. The onion should be chopped very finely or, alternatively, grated, so that it integrates perfectly into the final composition. We heat it in a pan with three tablespoons of oil, leaving it on the heat for a minute, which will help develop its sweet flavors. Then, we add the minced meat, sprinkling a little salt and pepper to taste, and let everything cook covered, on low heat, for about 30 minutes. It is important to closely monitor the amount of water that evaporates; if necessary, we can add a little water until the meat is fully cooked and the juice is almost completely evaporated. After turning off the heat, we let the filling cool slightly, then incorporate the egg and sour cream, mixing well.
After the dough has rested in the refrigerator, we divide it into two equal parts. Each part is rolled out with a rolling pin into a sheet about 0.5 cm thick. On each sheet, we place half of the meat filling, making sure to distribute it evenly. After covering the filling, we close the sheet, gently pressing with our hand on top to ensure it seals well. We use a fork to press the edges, so that the filling does not escape during baking. Before placing the pie in the oven, we prick the surface with a fork to allow steam to escape. We brush the pie with beaten egg to achieve a golden and appetizing crust.
After preparing all the pies, we place them in a tray and put them in the preheated oven, at a moderate heat, until they become beautifully browned and crispy. The enticing aromas will spread throughout the house, and the final result will be a delicious pie, perfect to be enjoyed with loved ones, whether as an appetizer or a main dish. Bon appétit!
