To prepare these delicious flatbreads, we start by gathering all the necessary ingredients. You will need quality flour, baking powder, salt, and lard. In a blender or food processor, combine the flours, baking powder, and salt, along with the lard cut into small cubes. These ingredients need to be mixed very well, so pulse the machine for about 10-15 seconds until the lard is fully integrated into the flour. The mixture should have a uniform texture, free of lumps.

Once you have the flour mixture, transfer it to a large bowl and gradually add 160 ml of water. Use a fork to mix the ingredients, making sure to incorporate everything. If you feel that the dough is too dry and does not come together well, do not hesitate to add the remaining water, a little at a time. Once the dough starts to take shape, knead it gently on a surface dusted with a little flour. The kneading process should last about 6-7 minutes until the dough becomes firm and elastic. If necessary, add a little more flour to avoid sticking.

After you have obtained a homogeneous dough, divide it into 8 equal pieces and shape each piece into a ball. Cover them with plastic wrap and let them rest for 40 minutes to relax the gluten and facilitate further rolling.

Before starting to bake, heat a pan over medium heat. It is optional to add a few drops of olive oil, but be careful not to let it burn. While the pan is heating, take each ball of dough and roll it out into a circle about 20-21 cm in diameter. Bake each flatbread in the pan for one minute on each side or until you see air bubbles and brown spots on the surface. These signs will indicate that the flatbreads are ready.

Once you have removed them from the pan, cover them with a clean towel or aluminum foil to keep them warm in case you consume them immediately. If you prefer to save them for later, let them cool and then cover them with plastic wrap and place them in the refrigerator.

If you like thinner flatbreads, this recipe is perfect. However, if you prefer thicker ones, you can double the dough portion. Also, if you want larger flatbreads, you can divide the dough into just 4 pieces and you will get flatbreads with a more generous diameter. These flatbreads can be served with various fillings, sauces, or alongside different dishes, adding extra flavor to your meal.

Makes 8-9 flatbreads. 245 g white wheat flour, 100 g black wheat flour, 3/4 teaspoon sea salt or fine pink salt, 1/3 teaspoon baking powder, 71 g lard, 180 ml warm water (between 40-45°C)
