- 3 large potatoes
- 1 carrot
- 50 g celery
- 1 tomato
- 1 onion

- 1 tablespoon ketchup
- 100 g spinach or lamb's quarters

Step by step
1. Preparing the chicken breast
- Start by slicing the chicken breast from the middle towards the edges, opening it up like a thicker sheet.
- Repeat the process with the second chicken breast.
- Place both pieces on a greased wooden board with a few drops of olive oil and use a meat mallet to gently pound them until they reach approximately 25 x 15 cm.
2. Preparing the roll
- Spread a sheet of aluminum foil in a 40 x 40 cm size and grease it well with 1 tablespoon of olive oil.
- Place the two overlapping pieces of meat slightly in the center of the foil.
- Season the meat well with salt, pepper, and spread ketchup on it.
3. The delicious filling
- Cut the carrot and cheese into thin sticks and arrange them parallel on the meat.
- In a pan, sauté the diced celery and tomato in the remaining olive oil. If desired, add a few chopped mushrooms.
- Blanch the spinach and/or lamb's quarters in hot water.
- Boil the eggs hard, then peel them.
- Evenly distribute the celery and tomato mixture over the entire surface of the meat, and place the spinach at one end of the roll. Put the quartered eggs on top of the spinach.
4. Rolling and baking
- Start rolling from the side where the spinach is, being careful to gently lift the foil to make it easier for you. Continue rolling until you reach the other end, pressing with your hands to form a compact roll.
- Wrap the roll in foil, tightly sealing the ends.
- Place the roll in a longer baking dish, add water up to 3/4 of its height, onion slices, a few cloves of garlic, herbs, 2 tablespoons of oil, white wine, and chicken spices.
- Bake in the oven at 160 degrees Celsius for 60 minutes. After this time, turn the roll using a spatula and bake at medium heat for 30-40 minutes, being careful to add water and wine if necessary, to prevent the juice from completely evaporating.
5. Preparing the potatoes
- While the roll is baking, peel the potatoes, wash them, and grate them using a special grater for hash browns or slice them into 3-4 mm thick slices.
- Fry the potatoes in hot oil, turning them on both sides until golden.
6. Serving
- After the roll is ready, take it out of the oven and let it cool for 5-10 minutes.
- Cut the roll into longer pieces or into slices 15-20 mm thick, removing the aluminum foil.
- Arrange the pieces on a platter, standing up, and serve them alongside the fried potatoes.
- You can garnish the dish with fresh spinach, lamb's quarters, dill, or parsley, as well as pickles or sour cucumbers for a contrast of textures and flavors.
