To prepare these delicious flaky croissants, we start by combining the ingredients for the dough. We use a generous amount of quality flour, which we place in a large bowl. In the center of the flour, we add the necessary liquids: warm water and milk, along with fresh yeast. It is important that the yeast is well dissolved, to ensure an even rise of the dough. We mix gently until all the ingredients are homogenized. Then, we start kneading the dough with our hands, gradually adding a pinch of salt. The kneading should last for a few minutes until the dough becomes elastic, soft, and non-sticky, easily coming off our hands.

Once the dough is ready, we divide it into 27-28 equal pieces, each weighing about 70 grams. We form balls and place them on a tray, covering them with a clean towel to let them rise. The rising will happen quickly due to the amount of yeast used, and the dough will rise beautifully. After about 30 minutes, when the balls have risen, we prepare to transform them into croissants.

Take each ball, gently flatten it on a work surface, then use a rolling pin to roll it out into a rectangle shape, about 20 cm long. We start rolling the dough from the base of the rectangle, pressing gently and pulling to the sides, to create a more elongated croissant. This technique will ensure an airy texture and a pleasant appearance of the croissants.

The formed croissants are placed on a tray lined with baking paper, and then we let them rise again until they double in volume. When they are ready, we brush them with a mixture of egg yolk and a little water, which will give them a golden and shiny color when baked. We sprinkle seeds on top, whether they are sesame, poppy, or sunflower seeds, depending on everyone’s preferences.

The oven should be preheated to 220°C, and the croissants bake for 12-14 minutes until they become golden and fragrant. After taking them out of the oven, we let them cool for a few minutes before enjoying them. These croissants are delicious both warm and cold, having a flaky texture and a unique taste. They stay fresh for 2-3 days, but they certainly won’t last long, as everyone will love them. Enjoy your meal!
