To prepare a delicious chicken roll, the first essential step is to take care of the chicken breast. We place it on a wooden board and, using plastic wrap, we pound it with a meat hammer. This process helps tenderize the meat, making it easier to roll, and prevents the texture from breaking apart. Once the chicken breast is even, we season it to taste with salt, pepper, and, if desired, other preferred spices such as paprika or herbs.

After seasoning the meat, we move on to the filling. We lay slices of ham over the chicken breast, followed by grated cheese, which will add a creamy and savory flavor. Then, we prepare an omelet from the two eggs, which we cut into small pieces and add over the cheese. We enhance the flavor of the roll with a few slices of sausage, which will bring a smoky taste and a pleasant texture. Now, carefully, we roll the chicken breast, starting from one end and continuing to the other, making sure the filling stays well wrapped.

To keep the roll compact, we tie it with kitchen twine, but if we don't have any, we can improvise with a sturdier string. In a pan, we heat a little oil and place the roll to fry, turning it occasionally until it becomes golden on all sides. This step not only helps seal the filling but also provides a delicious crust.

After the roll is fried, we transfer it to a baking dish. Here, we add the onion cut into larger pieces, whole garlic cloves, sliced tomatoes, a few sprigs of thyme, and to intensify the flavors, we pour in the wine and about 1/2 cup of water or, better yet, chicken broth. We cover everything with aluminum foil and put the dish in the oven, letting it bake at a moderate heat for 30 minutes.

After this interval, we remove the foil and let the roll brown for another 10 minutes, turning it on all sides to achieve an even and appetizing color. Once ready, we take the roll out onto a platter and take care of the sauce. We finely puree the vegetables from the baking dish, thus obtaining a delicious sauce, perfect to accompany the roll. If you prefer, you can leave them as they are, in pieces, for a more rustic texture. This recipe is not only tasty but also very versatile, being able to be served alongside a side of mashed potatoes or a fresh salad. Enjoy your meal!
