Chicken breast meatballs with new potatoes: minced meat with onion and bread, browned in a pan and served with fried potatoes. The potatoes are boiled first, then fried over low heat until golden on all sides, and the meatballs are browned at the edges. I put them on the plate with the potatoes, sprinkle over the chopped dill, and add a few slices of tomato on the side. Preparation: 25 minutes. Cooking: 40 minutes. Total time: 65 minutes. Servings: 4. About 730 kcal and 40 g protein per serving.

Ingredients

For the meatballs

  • 500 g chicken breast
  • 1 egg
  • 1 large onion (200 g)
  • 2 tablespoons oil for the onion
  • 30 g crumb from two slices of bread
  • 3 tablespoons white flour
  • 1 pinch baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 tablespoons flour for shaping
  • 4 tablespoons oil for the meatballs

For the potatoes

  • 1 kg new potatoes
  • 1500 ml water
  • 1 teaspoon salt for the water
  • 4 tablespoons oil for the potatoes
  • 15 g dill (1 bunch)
  • 2 medium tomatoes (300 g)

Preparation

1. Wash the new potatoes well and cut the larger ones into cubes or chunks. The small ones stay whole. 2. Put the potatoes in 1500 ml water with 1 teaspoon of salt, boil them for 15 minutes, until a knife pierces them easily but they do not fall apart, then drain them. 3. Clean the dill, wash it, dry it well and chop it finely. 4. Peel the large onion, chop it finely and soften it in 2 tablespoons of oil for 5 minutes, until glassy. Let it cool. 5. Pat the chicken breast dry with paper towels, without washing it, and grind it finely. Add the cooled onion, the egg, the crumb from two slices of bread, 3 tablespoons of white flour, a pinch of baking soda, 1 teaspoon of salt and 1/2 teaspoon of ground pepper, then mix well. 6. With hands dusted with 2 tablespoons of flour, shape small meatballs. 7. Heat 4 tablespoons of oil in a wide pan and fry the meatballs for 4-5 minutes on each side, until browned all over. 8. In another wide pan, heat 4 tablespoons of oil until very hot, add the drained potatoes and fry them over low heat for 10 minutes, stirring from time to time, until golden. 9. Cut the tomatoes into thick slices. 10. Serve the potatoes hot, sprinkled with dill, with a few warm meatballs and slices of tomato alongside.

Notes

If the potatoes are small and stay whole, shorten the boiling to about 12 minutes, while the larger pieces need the full 15 minutes. If the mince is too soft and will not hold its shape, add one spoon of flour, no more. Boneless chicken thigh, 500 g, is ground the same way and can replace the breast, and the meatballs come out juicier. Potatoes can fall apart if they stay too long in water, so drain them as soon as they are pierced. Potatoes are the step people rush, but on high heat they burn outside before they brown in the middle. A green salad with oil and vinegar goes well alongside. The meatballs and leftover potatoes keep in the fridge for up to 3 days and are reheated in a pan. Contains gluten from the flour and bread, as well as egg.

Frequently asked questions

What if the meatballs stick to the pan?

The pan needs to be well heated and the 4 tablespoons of oil should cover the bottom. Turn the meatballs only when they release easily, usually after 4 minutes.

How do I recognize good new potatoes?

The skin should be thin and come off easily with a finger. Those with green spots taste bitter, so skip them.

Can I leave out the baking soda?

Yes, a pinch is a small amount, and the meatballs are still good without it. They are just slightly denser inside.

What can I use instead of dill?

Parsley works in the same amount, 15 g finely chopped, but it has a grassier taste.
