To prepare a delicious bread, we start by activating the yeast. In a small bowl, we add 100 ml of warm water, not hot, and sprinkle the dry yeast. We gently stir with a teaspoon and let the mixture sit for about 10 minutes. This process will allow the yeast to become active and form bubbles, a sign that it will help the dough rise.

Meanwhile, in another bowl, we sift 500 g of flour, preferably from durum wheat, to achieve a better texture. We use a special sieve for semolina, as the granulation of semolina flour is larger and will not pass through the regular flour sieve. This will contribute to a bread with a crispy crust and a soft crumb. After sifting the flour, we add the mixture of water and yeast, along with a teaspoon of salt. It is important to add the salt, as it not only provides flavor but also improves the structure of the dough.

We start mixing the ingredients using a wooden spoon or our hands until the dough begins to form. If the dough is too sticky, feel free to gradually add a few tablespoons of extra flour until it becomes easy to handle and no longer sticks to your hands. Once the dough is well combined, we divide it into four equal parts, forming round balls. We place them on a clean plate and cover them with a damp towel, allowing them to rise. Although the original recipe suggests only 10 minutes, it is recommended to let the dough rise for 30-40 minutes in a warm place, as it will become fluffier and airier.

After the dough has risen, we place a pan over medium heat, without oil or butter, to heat it well. We take each ball of dough and roll it out with a rolling pin or our hands until we achieve a round shape about 1 cm thick. We place each disc of dough in the hot pan, being careful not to overcrowd them. We bake each piece for 2-3 minutes on each side until they become golden and slightly browned.

Once all the pieces are ready, we can enjoy them warm, accompanied by various fillings or sauces, turning them into an unforgettable culinary experience. This simple and rustic recipe will bring a touch of flavor to every meal!

 Ingredients: 100 g of flour 00, 100 g of durum wheat flour (semolina), but you can use only 00 if you don't have any other. 7 g of brewer's yeast, 150 ml of water (it's good to start with only 100 and add more if necessary; I added about 50 g of flour because it was too sticky) salt.
