Beef goulash with potatoes and cabbage in a multicooker

Caraway gives this beef goulash with potatoes and cabbage in a multicooker its Hungarian touch, and it simmers until the meat is tender. The potatoes and cabbage go in towards the end, and the stew comes out with soft vegetables and tender chunks of beef. I choose chuck with a little fat tucked between the fibers. Preparation: 20 minutes. Cooking: 100 minutes. Total time: 120 minutes. Servings: 2. Approximately 1100 kcal and 58 g of protein per serving.
Ingredients
- 500 g beef chuck cut into cubes
- 3 tablespoons olive oil
- 4 garlic cloves
- 1 medium onion (150 g)
- 1 medium carrot (100 g)
- 1 medium green bell pepper (150 g)
- 2 celery stalks (80 g)
- 1 teaspoon iodized salt
- 1 teaspoon sweet paprika
- 1/2 teaspoon freshly ground pepper
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon caraway seeds
- 6 red potatoes from Covasna
- 500 g white cabbage
- 2 medium tomatoes (240 g)
Preparation
1. Pat the meat dry with paper towels. Add 3 tablespoons of olive oil, the beef and the minced garlic to the multicooker pot. Press MENU, select FRY and set COOKING TIME to 10 minutes, then press START. Stir from time to time, until the meat starts to brown. 2. Peel and chop the onion, carrot and green bell pepper. Slice the celery stalks and add all the vegetables to the pot. Add the salt, sweet paprika, pepper, bay leaves, thyme and caraway seeds, then stir. Select STEW for 60 minutes and press START; the meat should be tender. 3. Peel the potatoes and cut them into quarters. Finely shred the cabbage and chop the tomatoes. Add them to the pot, stir and cook for another 30 minutes on STEW, until the potatoes are soft. 4. When the program ends, the multicooker automatically switches to KEEP WARM. Unplug the appliance.
Notes
Red potatoes hold their shape better than floury ones; choose a cabbage with tightly packed leaves and slice it finely. Unevenly cut beef chunks may become tender at different rates. The stew keeps in the fridge for up to 3 days. It’s like a beef stew with the side cooked in the same pot; put hot peppers or sour cream on the table. You can replace the caraway seeds with 1/2 teaspoon of ground caraway, and leave out the sour cream for a dairy-free version.
Frequently asked questions
Why might the meat still be tough?
Extend the STEW program by 15 minutes and check again to see if the chunks are tender.
Can I use canned tomatoes?
Yes, add 200 g of chopped and drained tomatoes so you don’t add extra liquid.
What should I do if the cabbage is still firm at the end?
Leave it on STEW for another 10 minutes, then check whether it has softened.
Can I use beef round instead of chuck?
Yes, cut the beef round into cubes of about 3 cm and leave it on STEW for another 15 minutes if it doesn’t come apart easily.
