To prepare a delicious elderflower drink, it is essential to ensure that we have all the necessary ingredients and utensils. We start by preparing a 10-liter jar or, alternatively, two 5-liter containers that are perfectly clean, free of grease or other impurities. These containers will be the place where the magic happens, transforming simple ingredients into a refined and aromatic drink.
Once we have ensured the cleanliness of the vessels, we fill each container with approximately 5 liters of water, leaving a little space for adding sugar and lemons. After pouring the water, we add the sugar, stirring gently to dissolve it. Here we introduce the elderflowers, which should be fresh and fragrant; they will add a wonderful floral taste to our drink. The lemons, sliced, are next on the list. Make sure to squeeze them well for their juice before adding them to the mixture to maximize the flavor.
To add a bit of acidity, we add lemon salt, being careful not to overdo it, especially if you prefer a less sour drink. Everything is mixed with a wooden spoon, and then we cover the container with a lid, but without closing it completely; it is important to leave a little space for air so that fermentation can take place. We let the mixture sit for 48 to 96 hours, depending on the room temperature and the desired intensity of flavor. You will know it is ready when the water turns yellow and the smell is irresistible, and a simple taste will confirm that you have created a wonderful drink.
When you consider the drink is perfect, it is time to transfer it into bottles. Using a funnel and cheesecloth, filter the mixture to remove the flowers and pulp, then fill the bottles with the clear liquid. After filling the bottles, put the lid on each one and store them in a cool, dark place. The juice will continue to ferment, so be careful when opening a bottle that has been sitting for a while to avoid any surprises.
