Ingredients for the dough:

- 1 large onion, finely chopped
- 200 g feta cheese
- 2 eggs
- 50 g sour cream

Preparation:
1. Making the dough: In a large bowl, combine the flour and salt. Add the cold butter and, using your fingers, rub it into the flour until the mixture resembles fine sand. This is an essential technique for achieving a flaky dough. Add the egg and 4 tablespoons of cold water. Mix gently with a spatula or your hands until the dough starts to come together. If necessary, gradually add a few more tablespoons of cold water until you achieve a homogeneous mixture.
2. Chilling the dough: Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes. This will make the dough easier to roll out and improve the final texture of the pie.
3. Preparing the filling: If using fresh spinach, wash it well under running water and boil it for 2-3 minutes, then drain and chop finely. If using frozen spinach, thaw it and drain any excess water. In a pan, heat a little olive oil and sauté the chopped onion until translucent. Add the spinach and stir to combine the flavors.
