To prepare a delicious meat stew with peas, the first step is to ensure we have all the ingredients ready. We start by cutting the meat into suitable pieces, if it is not already cut. Usually, pork or beef works best for this recipe, but you can also experiment with other types. After the meat is prepared, we move on to the onion. We peel it and chop it into small cubes, so that it cooks evenly and integrates perfectly into the dish. Then, in a deep pot, we heat two tablespoons of oil over medium heat. When the oil is hot, we add the chopped onion and sauté it gently, stirring occasionally, until it becomes translucent and fragrant. This process will bring out the natural sweetness of the onion, which will enrich the flavor of the dish. Once the onion is ready, we add the cut meat, sprinkle a little salt and freshly ground pepper, then cover the pot with a lid. We let the meat cook for 10 minutes, to brown slightly and release its juices. At the end of this time, we add the white wine, which will provide a sophisticated taste and help tenderize the meat. We let the wine evaporate for 5 minutes, stirring occasionally. The next step is to add the canned tomatoes, which should be previously chopped, along with a pinch of seasoning. These will give the sauce a rich texture and divine flavor. We cover the pot again, but leave the lid slightly ajar to allow the steam to escape. We let it simmer over medium heat for about 20 minutes, stirring occasionally to prevent sticking. After this time, we add the peas, which can be fresh or frozen, depending on preference and availability. If necessary, we add a little warm water to achieve a more fluid sauce. We let the stew simmer for another 5-10 minutes, so the peas cook and the flavors blend harmoniously. It is important to taste the dish and, if needed, adjust the flavor with salt or pepper according to our preferences. Finally, we sprinkle a little freshly chopped or dried parsley to add a note of freshness.
