Moussaka Recipe – a Mediterranean feast on a plate

Moussaka is a classic dish, cherished by many for its combination of flavors and textures. This recipe was passed down to me by my mother-in-law, a true master in the art of cooking, and it brings back memories of family moments around the table. Although I am not a big eater, I enjoy preparing this dish, knowing how much my husband loves it. This moussaka recipe is rich in vegetables and meat, providing a delicious meal for loved ones that will surely delight any palate.

Ingredients:

- 2 large eggplants
- 3 large zucchinis
- 3 large potatoes
- 500 g minced meat (beef or mixed with pork)
- 1 large onion, chopped
- 3 tablespoons concentrated tomato sauce
- Salt, to taste
- Pepper, to taste
- 1 teaspoon sugar
- Oregano, to taste
- 2 bay leaves
- 100 ml olive oil
- 500 ml béchamel sauce (homemade or store-bought)
- 1 teaspoon ground cinnamon
- 300 g grated Gouda cheese

Preparation:

1. Preparing the vegetables:
Start by washing the eggplants, zucchinis, and potatoes well. Slice the potatoes into rounds about 1 cm thick. Cut the zucchinis lengthwise into 1 cm slices, and slice the eggplants into 1 cm rounds as well. Place the eggplants in a bowl of water with plenty of salt for about 30 minutes. This will help eliminate the bitter taste.

2. Frying the vegetables:
Once drained, rinse the eggplants under cold water and squeeze them well. In a deep fryer, fry the potatoes at 190°C for 3-4 minutes. Remove them and place them on a plate covered with paper towels to absorb the excess oil. Continue with the zucchinis, frying them in the same way. After frying, let all the vegetables cool in a colander to remove the oil, preferably overnight.

3. Preparing the meat sauce:
In a large skillet, add 100 ml of olive oil and sauté the chopped onion. After a few minutes, add the minced meat and stir, allowing it to brown over low heat. Once the meat is well browned, add the concentrated tomato sauce, salt, pepper, sugar, oregano, bay leaves, and cinnamon. Add water until the meat is covered, then let it simmer covered over low heat for 1 hour and 30 minutes, stirring occasionally to prevent sticking. It is ready when there is no liquid sauce left.

4. Assembling the moussaka:
The next day, prepare a baking dish. Place a layer of potatoes at the bottom of the dish, followed by a layer of zucchinis, then a layer of eggplants. Add half of the grated Gouda cheese, followed by the meat sauce. Cover everything with the other half of the cheese, ensuring it is evenly distributed.

5. Preparing the béchamel sauce:
If you choose to make the béchamel sauce at home, mix 50 g of butter with 50 g of flour and gradually add 500 ml of milk, stirring continuously to avoid lumps. Cook until the sauce thickens and becomes creamy. If you prefer, you can buy a ready-made béchamel sauce. Pour the sauce evenly over the moussaka, then sprinkle the remaining cheese on top.

6. Baking:
Preheat the oven to 180°C (fan mode) and place the moussaka dish inside. Bake for about 40 minutes until the top is golden and appetizing.

7. Serving:
It is essential to let the moussaka cool slightly before cutting it; otherwise, the vegetables may fall apart. You can serve it with a fresh salad or with Greek yogurt on top for a perfect contrast of flavors and textures.

- If you want a healthier version, you can opt for grilled vegetables instead of fried, although the taste will be different.
