To prepare a delicious stuffed beef tongue, we will start by gathering all the necessary ingredients. Make sure you have a fresh beef tongue, 2 carrots, 1 parsley root, whole pepper, 2 bay leaves, 4 cloves of garlic, and 1 onion at hand. You will also need rapeseed oil for sautéing, bread crumbs, milk, an egg, and fresh parsley for the filling, as well as salt and pepper to taste.
The first step is to boil the tongue in a large pot with water and salt. Add the carrots cut into large pieces, the parsley root, whole pepper, bay leaves, the whole garlic, and the chopped onion. Boil everything over medium heat until the tongue becomes tender, which may take about 2-3 hours. If you use a pressure cooker, the process will speed up, and the tongue will be ready in about 35 minutes.
After the tongue is boiled, remove it from the pot and let it cool slightly. Then, peel the outer skin off the tongue and cut it in half, being careful not to separate it completely. Use a sharp knife to hollow out the two halves, making sure no large pieces of meat remain inside. The removed meat is finely chopped and added to a bowl.
In a pan, heat a tablespoon of rapeseed oil and sauté the chopped onion until it becomes glassy and slightly golden. This will add a delicious flavor to the filling. Add the sautéed onion to the tongue meat, then add the bread soaked in milk and well squeezed, in equal quantity to the chopped tongue. Add a raw egg, finely chopped parsley, salt, and pepper to taste. Mix all the ingredients well until you obtain a homogeneous mixture.
Fill each half of the tongue with this filling, pressing lightly to compact it. Grease a piece of aluminum foil with a little rapeseed oil and wrap the stuffed tongue in it, making sure it is well sealed to keep the juices inside. Place the wrapped tongue in a dish or tray, pouring about 150 ml of water underneath it to prevent sticking.
Preheat the oven to 180 degrees Celsius and place the dish with the stuffed tongue inside. Let it bake for about 30 minutes, so that the flavors blend perfectly and the tongue gets a slightly golden crust.
To complete this dish, you can prepare a delicious sauce from mayonnaise, sour cream, and grated horseradish, which will add a note of freshness and a bit of spiciness. Serve the stuffed tongue sliced, alongside the prepared sauce, for an unforgettable festive meal. Enjoy your meal!
