Crispy, flavorful chicken strips

Crispy, flavorful chicken strips are marinated in white wine, soy sauce and smoky barbecue sauce, then fried in a breadstick crust. The center stays tender, while the coating browns unevenly; I served them with French fries and watercress salad. I cut the strips about as thick as a finger so they brown without drying out. Prep: 20 minutes. Cook: 17 minutes. Rest: 180 minutes. Total time: 217 minutes. Serves: 4. About 530 kcal and 44 g protein per serving.
Ingredients
- 2 chicken breasts (600 g)
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 2 tablespoons smoky barbecue sauce
- 125 ml white wine
- 1 teaspoon Tabasco sauce (optional)
- 100 g breadsticks
- 1/2 teaspoon salt
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 20 g Parmesan
- 100 g flour
- 2 eggs
- 500 ml oil for frying
Preparation
1. Pat the chicken breasts dry with paper towels and cut them into long strips about 1.5 cm thick. 2. Toss the strips with 1 teaspoon salt, 1/2 teaspoon white pepper, 1 teaspoon garlic powder, the olive oil, soy sauce, barbecue sauce and white wine. For a spicy kick, add the Tabasco sauce. Cover the dish and refrigerate for 3 hours. 3. Crush the breadsticks in a food processor. Mix the resulting crumbs with 1/2 teaspoon salt, 1 teaspoon white pepper, 1/2 teaspoon garlic powder and the Parmesan. 4. Beat the eggs in a bowl. Drain the marinade from the strips, then coat them one at a time in flour, egg and breadstick crumbs. 5. Heat the oil in a pan over medium heat for 5 minutes. Fry the chicken in 3 batches, for 4 minutes each, turning the strips once, until the crust is golden and the meat is no longer pink in the center. Transfer them to paper towels.
Notes
I served them with French fries and watercress salad, with cocktail sauce on the side. If you have any left, keep them in a sealed container in the fridge for up to 3 days; when reheating, the oven keeps the crust crisp better than the microwave. You can use 100 g panko instead of breadsticks, for a slightly different texture. The usual coating contains gluten and eggs, and the Parmesan adds dairy. Breadsticks can already be salty, so taste the crumbs before adding more salt. Strips cut to a similar thickness fry evenly; very thin ones dry out faster.
Frequently asked questions
Can I use boneless thighs instead of breasts?
Yes. Cut the thighs into strips of similar thickness and fry them for 5-6 minutes per batch, until the meat is no longer pink in the center.
Why does the coating come off the chicken?
If the strips are too wet, the crumb coating can slide off. Once they’re coated in crumbs, leave them on a plate for 5 minutes before frying.
Can I make them in an air fryer?
Yes, arrange them in a single layer and cook at 200°C for 10-12 minutes, turning them halfway through.
