To prepare a delicious and comforting soup, we start by placing the pig's feet in a large pot, taking care to cover them with enough water. It is important to choose a suitable pot so that we have enough space to add other ingredients along the way. Once the feet are in the pot, we turn the heat to low and let it simmer slowly. This method will allow the collagen in the meat to be released, resulting in a rich and flavorful soup. We will know that the feet are almost ready when the skin starts to crack, a sign that the texture is becoming tender and full of flavor.

After about an hour, we add chicken thighs or, depending on preference, pork cut into smaller pieces. It is important that all ingredients are fresh, as the quality of the meat will directly influence the taste of the soup. We add a teaspoon of salt, which will help develop the flavors, and a few peppercorns for an extra kick. Those who want an additional note of flavor can add a cube of vegeta, which will enhance the soup's aroma.

As the soup simmers, the aroma becomes more and more inviting, and we prepare for the final step. About 10 minutes before turning off the heat, we add finely chopped garlic. This choice adds a boost of flavor and health to our dish. Garlic, known for its beneficial properties, will enrich the soup and give it a distinct note.

When the meat becomes tender and easily separates from the bones, we turn our attention to straining the soup. Using a fine sieve, we will separate the liquid from the bones and leftover meat. Now it is time to clean the meat from the bones, being careful to cut it into suitable pieces for easy serving. We place the pieces of meat in bowls or decorative shapes, then pour the hot soup over them.

To finish the dish, we let the soup cool slightly, then put it in the refrigerator to firm up a bit. This step is not mandatory, but it will make the soup even tastier. When serving, we recommend adding a few drops of freshly squeezed lemon juice or, for those who prefer, a sprinkle of paprika to enhance the flavors. Thus, we enjoy a comforting soup, full of flavor and tradition.
