If you are looking for a quick and tasty recipe, baked pasta with grilled zucchini rolls is the perfect choice! This dish not only looks spectacular but also combines delicious flavors that will captivate you from the first bite. Let's get started!

Ingredients:

- 250 g pasta (preferably penne or fusilli)
- 2 medium zucchinis
- 200 g ham (preferably Prague ham)
- 1 small onion
- 200 g grated mozzarella cheese
- 100 g grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 clove of garlic (optional)

Instructions:

1. Cooking the pasta: In a large pot, boil salted water. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

2. Grilling the zucchini: Wash the zucchinis well and slice them lengthwise into thin slices, about 5 mm thick. Preheat a grill pan or stovetop grill. Brush the zucchini slices with a little olive oil and sprinkle with salt and pepper. Grill each slice for 2-3 minutes on each side until lightly browned. Let them cool slightly, then roll each slice to form rolls.

3. The filling: In a pan, add the 2 tablespoons of olive oil and sauté the finely chopped onion for 2-3 minutes until it becomes translucent. Add the leftover ham cut into small pieces (edges or slices not used for the rolls) and sauté them together with the onion for another 3-4 minutes until lightly browned.

4. The pasta mixture: In a large bowl, combine the cooked pasta with the ham and onion mixture, add oregano, salt, and pepper to taste. If desired, add a crushed clove of garlic for extra flavor.

5. Assembly: Preheat the oven to 180°C. In a baking dish, add the pasta mixture and level it evenly. Arrange the zucchini rolls on top, placing them nicely for an attractive look. Sprinkle the mozzarella and parmesan cheese on top.

6. Baking: Place the dish in the preheated oven and bake for 20-25 minutes until the cheese melts and becomes golden and bubbly.

Serving suggestions:
Serve baked pasta with zucchini rolls hot, alongside a fresh green salad and a lemon dressing. This contrast of textures and flavors will make this dish a true feast.

Possible variations:
You can replace zucchini with other vegetables, such as eggplant or bell peppers, to diversify the recipe. If you want a vegetarian version, you can omit the ham and add more vegetables, such as mushrooms or spinach.

These baked pasta with grilled zucchini rolls are not only a delicious option but also an excellent way to add vegetables to your diet. Enjoy every bite, knowing that you have prepared a healthy and flavorful dish!

From the slices of ham, we cut as many long strips as we want rolls (in my case 16). The trimmings from the ham and onion are chopped and sautéed in a little olive oil. Meanwhile, we cut the zucchini into slices lengthwise (the number of zucchini slices should correspond to the number of ham strips). They should not be cut too thin, about 4-5 mm thick. The zucchini trimmings are coarsely chopped. The chopped zucchini is added to the onion with the fried ham, seasoned, and left to brown for another 2 minutes. We add the milk. When it comes to a boil, we add the cubed mozzarella and some of the garlic pressed. We mix and remove from the heat. If you want the sauce thicker, add a tablespoon of starch. We add the torn basil and mix. We keep the sauce warm. We grill the zucchini slices (meanwhile, we boil the pasta in salted water until al dente, slightly firmer). We crush the remaining garlic, mix it with 2 tablespoons of olive oil, season with salt and pepper, and pour it over the grilled zucchini. We gently mix the slices. We place a strip of ham on a slice of zucchini and roll it up. The cooked al dente pasta is placed in a heat-resistant dish, the sauce is poured over, and mixed. We arrange the rolls. We sprinkle cheese on top and put it in the preheated oven at 250°C + ventilation and let it brown to taste! The zucchini rolls can be baked with cheese on top and without pasta with sauce underneath or can be drizzled with a little lemon juice and parmesan. Serve warm. Enjoy your meal!
