Coconut flake cake with chocolate cream

Dessert - Coconut flake cake with chocolate cream by Ina I. - Recipia

Fine coconut flakes are mixed evenly into the cake and add a subtle bite to every slice. Coconut flake cake with chocolate cream has a soft base, white chocolate cream and a layer of flakes sprinkled on top. Once chilled, it cuts into pieces with clearly defined layers. For decoration, I like to use longer flakes, which show up nicely against the white cream. Prep: 20 minutes. Cook: 30 minutes. Rest: 90 minutes. Total time: 140 minutes. Servings: 8. Ingredients

For the cake

  • 3 eggs
  • 100 g sugar
  • 100 ml milk
  • 100 ml oil
  • 100 g sugar
  • 200 g flour
  • 1 sachet baking powder
  • 10 g coconut flakes

For the cream

  • 100 ml whipping cream
  • 50 g white chocolate
  • 2 tablespoons oil
  • 100 ml whipping cream
  • 100 ml milk
  • 1 sachet Creme Ole

For decoration

  • 20 g coconut flakes

Preparation

1. Separate the egg yolks from the whites. Beat the yolks with 100 g of sugar, then mix in 100 ml of milk and 100 ml of oil. 2. Beat the egg whites until foamy with the remaining 100 g of sugar. 3. Fold the egg whites into the yolk mixture. Add the flour mixed with the baking powder and 10 g of coconut flakes. 4. Line a baking pan and pour in the batter. Bake at 180°C for 20-25 minutes, until the cake is lightly browned. Leave it to cool for 30 minutes. 5. Whip 100 ml of cream until fluffy. Melt the white chocolate with 2 tablespoons of oil in a double boiler, stirring until runny, about 5 minutes. Add the remaining 100 ml of cream to the melted chocolate. 6. In a bowl, mix 100 ml of milk with the whipped cream, melted chocolate and the sachet of Creme Ole until smooth. 7. Spread the cream over the cooled cake, sprinkle with 20 g of coconut flakes and refrigerate the cake for an hour.

Notes

Cut it into squares and serve with black coffee. Fine flakes mix easily into the cake; if you have large flakes, chop them a little and keep a few whole for decoration. The cream may soften if you spread it over a cake that is still steaming, so wait until it has cooled completely. For clean-edged slices, wipe the knife blade after each cut. Covered, it keeps in the fridge for up to 3 days. The white chocolate can be replaced with 50 g of milk chocolate, which makes the cream darker. It contains gluten, eggs and dairy.

Frequently asked questions

Why did the cake sink after baking?

If you open the oven in the first 15 minutes, the middle may sink. Keep the door closed until that time has passed.

Can I replace white sugar with brown sugar?

Yes, use the same 200 g. The cake will come out darker, with a slight caramel flavor.

Why does the cream stay soft?

Make sure you are using a dessert powder meant for cold preparation. Pudding powder that needs to be cooked does not set the same way if you mix it only with cold liquids.
