- 250 g dark chocolate (optional with orange)

For Decoration:

Preparing the Cake

Step 1: Making the Chocolate Cream

Start by preparing the creams, as they need time to cool and set. In a saucepan, heat the heavy cream until it's almost boiling (when bubbles form around the edges). Once it's nearly boiling, remove from heat and pour the cream over the chocolate in a mixing bowl. Mix until the cream is combined. It's important not to over-mix, or it will curdle. The cream should be soft but creamy in consistency. Place each cream in a bowl and refrigerate.

Step 2: Preparing the Cake Base

In another bowl, add all the ingredients for the cake, except for the chocolate. Use a mixer to combine the flour, powdered sugar, eggs, baking powder, vanilla, instant coffee, and cocoa powder. Mix well until you achieve a smooth batter. The butter should be soft to help achieve a fine texture. Finally, add the melted chocolate and, if necessary, a little milk to adjust the consistency.

Divide the batter into three equal parts and bake each layer separately in cake pans lined with parchment paper. Bake for 30 minutes or until a tester inserted in the center comes out clean. Allow the layers to cool completely.

Step 3: Assembling the Cake

On a large platter, assemble the cake: place the first layer, spread with the coffee chocolate cream, follow with the second layer and apply the white chocolate cream. Then, add the last layer and spread it with the milk chocolate cream.

To finish, use the dark chocolate cream (at room temperature) to coat the cake. This will give it an elegant touch and a perfect contrast to the sweetness of the other creams.

Step 4: Decorating the Cake

For a festive look, decorate the cake with Merci chocolates and Belgian chocolate candies. Don’t forget to prepare the chocolate sauce: melt the Merci chocolate with the milk in a double boiler and drizzle with a spoon at the base of the cake. This sauce will add extra flavor and surely impress your guests.

Practical Tips

- Buy quality ingredients: Choose good quality chocolate for an intense and sophisticated taste.
- Ensure all ingredients are at room temperature for easier mixing.
- If you want to customize the cake, you can add chopped nuts or berries between the layers of cream.
- Chill the cake for a few hours before serving to allow the flavors to meld perfectly.
