Baiadera Cake: A Delight with Nuts and Chocolate

If you are looking for a quick and delicious dessert, the Baiadera cake is the perfect choice. This recipe combines the intense flavor of nuts with the creamy consistency of chocolate, offering an unforgettable culinary experience. The story of Baiadera cake is lost in the mists of time, but what we know for sure is that it has won the hearts of many sweet lovers due to its simplicity and inviting flavors. Whether you prepare it for a special occasion or simply to satisfy a craving, I assure you that you will be completely satisfied with the result.

Preparation time: 30 minutes
Cooling time: 30 minutes
Total time: 1 hour
Number of servings: 12

Ingredients:

For the base composition:
- 200 grams of sugar
- 150 ml of water
- 150 grams of finely ground nuts
- 150 grams of butter
- 1 tablespoon of cocoa
- 1 teaspoon of rum essence
- 250 grams of crushed biscuits (I used Coconitos and Petit Beurre with coconut flavor, which adds a tropical note)

For the glaze:
- 100 grams of cooking chocolate (I used chocolate from Profi)
- 2 tablespoons of whipped cream (or 2 capsules of coffee cream)
- 1/2 tablespoon of oil

Instructions:

1. Preparing the base composition: In a saucepan, add the sugar and water. Place the saucepan over medium heat and stir until the sugar completely dissolves. This syrup will provide the necessary sweetness for the cake. Once the sugar has dissolved, add the ground nuts and stir well. Let the mixture boil for 1-2 minutes, stirring constantly to avoid sticking.

2. Combining the ingredients: After the syrup has thickened slightly, add the crushed biscuits, butter, and rum essence. Mix with a spatula until the butter completely melts and the mixture becomes homogeneous. You will feel the delicious aroma of rum combined with the roasted nuts.

3. Dividing the composition: Divide the obtained mixture into two equal parts. In one part, add 1 tablespoon of cocoa and mix well until fully incorporated. This step will give the cake that beautiful chocolate hue.

4. Assembling the cake: Choose a tray of approximately 19x23 cm. Start by spreading the cocoa mixture in the tray, leveling it with your hand or a spoon, pressing lightly to achieve a compact base. Then, pour the white mixture on top and level it again. Make sure it is well distributed for a uniform appearance.

5. Cooling: Place the tray in the refrigerator for about 30 minutes. This step is essential as it helps the cake to firm up and achieve a perfect texture.

6. Preparing the glaze: In a bowl, add the cooking chocolate, whipped cream, and oil. Place the bowl over a double boiler and stir until the chocolate melts and the mixture becomes homogeneous. Avoid getting distracted at this moment, as the chocolate can easily burn.

7. Finishing the cake: Remove the tray from the refrigerator and pour the warm glaze over the cake. Level it with a spatula or spoon for a uniform finish. Place the tray back in the refrigerator, allowing the glaze to set well.

8. Serving: Once the glaze has set, you can cut the cake into squares or bars. A serving suggestion would be to decorate it with a little ground nut on top or serve it alongside a scoop of vanilla ice cream or a fragrant coffee.

Practical tips:
- You can experiment with different types of biscuits. Cocoa-flavored biscuits can add an interesting note to the dessert.
- If you enjoy stronger flavors, you can add a few drops of vanilla essence to the base composition.
- Instead of glaze, you can sprinkle cocoa or ground nuts on top for a simpler yet equally delicious version.

Nutritional benefits: This cake is rich in nuts, which are an excellent source of healthy fats, proteins, and antioxidants. Nuts contribute to heart health and can help maintain a healthy weight. Additionally, chocolate has beneficial effects on mood, being associated with the release of endorphins.

Frequently asked questions:
- Can I use other types of nuts? Absolutely! Pecan nuts or almonds are excellent alternatives.
- Is it possible to make this cake without sugar? Yes, you can use natural sweeteners like honey or maple syrup, but adjust the quantities according to the desired sweetness.
- What drinks pair best with Baiadera cake? A fragrant coffee or a fruit tea can perfectly complement the sweet taste of the cake.

I wish you happy cooking and encourage you to share your result with friends and family. Surely, Baiadera cake will become one of your favorites!
