This step is essential for facilitating the unmolding of the dessert at the end. If you want to add almonds, walnuts, or hazelnuts as decorations, it is recommended to toast them beforehand. This process intensifies the flavors and gives them a crunchy texture. Toast them in a baking tray or in a pan, without adding fats, stirring constantly to avoid burning.
Next, prepare each pudding separately. Start with the chocolate pudding: bring 350 ml of milk to a boil together with 1 tablespoon of butter and 100 g of sugar. Stir constantly, ensuring that the sugar and butter melt completely. Wait until the mixture starts to boil, then add the chocolate pudding powder that has been dissolved in 50 ml of cold milk. Reduce the heat and continue stirring, letting it simmer gently until the cream thickens. Once you have achieved the desired consistency, let the pudding cool slightly, then pour it into the tray and level the surface. Place the tray in the fridge, allowing the pudding to set completely.
Meanwhile, prepare the raspberry pudding in the same way: boil the milk with sugar and butter, then add the raspberry pudding powder dissolved in cold milk. After it thickens, let it cool and carefully pour it over the chocolate pudding, leveling the surface again. Repeat the process with the lemon pudding, which will add a fresh note to the dessert. Once all layers are prepared, refrigerate the tray for a minimum of 1 hour to stabilize.
After the pudding has cooled and set, carefully unmold the dessert onto a clean work surface. Use a sharp knife to cut cubes or rounds from this culinary delight. Roll the pieces in coconut, grated chocolate, almond flakes, walnuts, hazelnuts, or decorative candies, according to your preferences. Arrange the cubes on an elegant platter and keep them cool until serving.
