Desert - Swans by Sofia C. - Recipia
To prepare these delicious pastries, we will start by gathering the necessary ingredients so that everything is at hand. In a large pot, we pour water, add the oil and a pinch of salt, then place the pot on the heat. It is important to bring the mixture to a boil so that the flour integrates perfectly into the composition. When the water starts to boil, we take the pot off the heat and add all the flour in one go. We mix vigorously with a spatula or a wooden spoon until we obtain a homogeneous paste. After mixing well, we put the pot back on the heat, letting the mixture cook for about two minutes, stirring constantly. In the end, the dough will be compact and slightly elastic, but firm enough to shape it.

After the dough has cooled, we begin to add the eggs, one at a time, mixing well after each. This step is essential because the eggs will make the dough softer and easier to handle. When we have incorporated all the eggs, our dough becomes a fine and silky mass, ready to be shaped. We prepare a tray lined with baking paper or greased with a little butter. Using a spoon or a piping bag, we shape the dough into donut shapes or sticks, depending on our preferences. If we want to make éclairs, we shape the dough into long forms.

After we finish shaping the pastries, we place them in the preheated oven, being careful not to open the oven door during baking, as we risk them not baking evenly. When the pastries are nicely browned, we take them out of the oven and let them cool on a rack.

While the pastries are cooling, we start preparing the vanilla cream and whipped cream according to the instructions on the package. Once the cream is ready, we move on to assembly. We cut each donut in half, being careful not to break it completely. We fill each half with a generous layer of vanilla cream and another layer of whipped cream. Then, we take the S-shaped elements we prepared earlier and integrate them into our composition. The capacity of the cut donuts will form the wings of our delicious pastries.

After we finish assembling, we place the pastries in the refrigerator for a few minutes to stabilize. Before serving, we dust them with vanilla sugar, giving them a special and attractive appearance. These pastries are perfect for any occasion and will surely impress everyone. Although they require a little time and attention to detail, the final result will fully deserve the effort put in!
