It is important to maintain the ratio of 3/4 fruit and 1/4 dough, so that each bite is full of flavor.
After preparing the strawberries, mix them with lemon juice, which will add a note of freshness, 2 tablespoons of sugar for sweetness, and a teaspoon of cornstarch, which will help thicken the fruit juice during baking. If you don't have cornstarch on hand, you can omit it, but the result will be slightly different. Mix all the ingredients well and set them aside to let the flavors combine.
In a separate bowl, prepare the crumble dough. Mix the soft butter, which should be at room temperature, with brown sugar and vanilla sugar. Add a pinch of salt and, optionally, a pinch of baking powder to add an airy texture. Gradually incorporate the flour until you obtain a crumbly dough. It is normal for it not to be very compact, as we want to achieve that specific crunchy texture of the crumble.
