Savarina cake
A base is made from 5 eggs, 5 tablespoons of sugar, and 5 tablespoons of breadcrumbs as follows: 5 egg yolks are mixed with 5 tablespoons of sugar until they become pale and double in volume. It is essential to use an electric mixer to achieve an airy and fluffy texture. After obtaining this mixture, gradually add the 5 tablespoons of breadcrumbs, gently folding with a spatula to avoid losing air from the mixture. It is important that the breadcrumbs are fine, so as not to weigh down the base.
In another bowl, beat the egg whites until stiff peaks form, adding a pinch of salt to stabilize them. When the egg whites are ready, you can carefully fold them into the yolk mixture using a spatula and up-and-down motions to maintain the aeration of the batter. This technique will ensure a fluffy base, ideal for supporting the desired cream or filling.
Once you have finished mixing, pour the mixture into a baking tray lined with parchment paper.
