Plum Jam
To prepare a delicious plum jam with nuts, the first step is to take care of the fresh plums. Choose ripe but firm fruits to achieve a jam with a perfect texture. Remove the stems from the plums and wash them with cold water to remove any impurities. Once the plums are clean, cut them in half and remove the pits. This step is essential, as the pits can give the jam an unpleasant bitterness.
After you have prepared all the plums, place them in a large pot, adding a cup of water. Cover the pot with a lid and put it on low heat. It is important to simmer at a low temperature so that the plums soften gradually and release their natural juices. When the fruits become soft and their sweet aroma starts to be felt, it is time to add the sugar. Add all the sugar from the recipe, stirring well to dissolve it completely.
Once the sugar is integrated, add the walnut meat, which should be well washed and finely chopped. The nuts will add a crunchy texture and a delicious taste to the jam, making it even more special. Continue to simmer the mixture, stirring occasionally to prevent it from sticking to the bottom of the pot.
During the boiling process, you will notice that the jam begins to reduce. It is recommended that it reduces by about one-third of its initial volume, which will concentrate the flavors and improve the texture. Once the jam has reached the desired consistency, turn off the heat.
Prepare the jars in which you will store the jam. Make sure they are clean and, ideally, preheated. Pour the hot jam into the jars, leaving a little space at the top. Cover the jars with the appropriate lids and wrap them well in thick blankets. This slow cooling process will help create a vacuum inside the jars, ensuring better preservation. Once the jam has completely cooled, transport the jars to the pantry, where you will keep them at a cool temperature. Now you can enjoy this delicious jam on toast or as a filling for various desserts throughout the winter!
