To prepare this delicious apple delicacy recipe, we start by ensuring we have all the ingredients ready and at hand. The first step is to place the peeled and diced apples in a pot over medium heat, adding sugar on top. This caramelization process will bring out the natural sweetness of the apples, and the sugar will turn into a golden syrup. It is important to stir occasionally to prevent the apples from sticking to the bottom of the pot.

After we notice that all the water released by the apples has evaporated, we add 100 ml of water and leave it on the heat until it is completely absorbed. When the apples are soft, we turn them into a puree. If you prefer a chunky texture, mashing with a fork is an excellent choice, while a blender will create a smooth puree, perfect for filling.

In a separate bowl, we melt the butter and let it cool. Then, we mix the melted butter with the sour cream, eggs, vanilla extract, and cornstarch, homogenizing the ingredients well. We add the apple puree to the butter and sour cream mixture, then place the resulting cream on the heat, stirring continuously. It is essential to ensure that the mixture thickens evenly to avoid lumps. Once the composition reaches the desired consistency, we let the cream cool.

Now we take care of the dough. I prefer to use a bread machine to achieve perfect dough. We start by adding the liquid ingredients, followed by the dry ones. After we have obtained a homogeneous dough, we let it rise for two hours in a warm place, covered with a clean towel. When the dough has risen, we divide it into eight balls, but as I have noticed, forming smaller groups of 14-16 pieces might be more successful.

To shape them, we roll each ball into rectangles. From the middle, we cut strips, leaving one part free for the filling. We spread the apple filling on the whole side and carefully roll the strips over the filling, thus forming our delicious delicacies. We place them in a tray lined with parchment paper and let them rise for another 45 minutes.

Before putting them in the oven, we brush each piece with a mixture of beaten egg with a little milk and sprinkle almond flakes or ground walnuts, according to preference. Adding orange zest to the egg mixture brings a wonderful aroma. We preheat the oven to 200°C and bake the delicacies for 15-20 minutes until they become golden and fluffy. These will fill the house with a delightful fragrance, and the final result will be a treat that everyone will love.

Ingredients

Fondant ingredients: 200g peeled and diced apples, 2 eggs, 20g sugar, 60ml cream, 1 packet of vanilla sugar, 15g starch, 60g butter, 100ml water. I made half the quantity because I also used cottage cheese mixed with semolina, egg, vanilla, and sugar. Dough ingredients: 500g flour, 20g fresh yeast or 2 teaspoons of dry yeast, 70g sugar, 260ml milk, 50g butter, 1 egg, a pinch of salt, lemon zest (I added it myself, it wasn't in the recipe).
