To prepare a delicious recipe for pasta with cheese and raisins, start by boiling water in a large pot, adding a tablespoon of salt to flavor the pasta. When the water reaches a boiling point, add the pasta and cook according to the package instructions, making sure to stir occasionally to prevent sticking. Once the pasta is al dente, drain it in a colander, then immediately put it back in the pot. Add the melted butter over the pasta, gently stirring to coat them evenly. Let them cool slightly while you take care of the other ingredients.

In a separate bowl, crack the eggs and start beating them with a whisk or mixer, gradually adding the sugar. Continue beating until the mixture becomes frothy and the volume doubles, and the sugar completely dissolves. This process will give an airy appearance and a fluffy texture to the final dish.

In another bowl, blend the cottage cheese with the sour cream, vanilla and rum essences, and gradually add the milk. Mix well until you achieve a creamy and homogeneous mixture. Add the drained raisins and ground nuts, gently stirring to distribute them evenly throughout the mixture.

Now, take the egg foam and fold it into the cheese mixture, being careful not to deflate the volume you’ve achieved. Transfer this mixture over the cooled pasta and mix gently, so as not to break the pasta but to coat them with the new mixture.

Prepare a heat-resistant dish that you butter well, then pour the pasta and cheese mixture into it. Preheat the oven to 175 degrees Celsius and place the dish in the oven for about 55-60 minutes, or until a golden, slightly hardened crust forms on top. Ten minutes before it’s done, evenly sprinkle the brown sugar and cinnamon mixture to add a flavorful taste and a crunchy texture.

When the dish is ready, take it out of the oven and let it cool for 10 minutes in the dish. This will allow the flavors to stabilize and make it easier to portion. Serve it warm to enjoy its delicious taste. If there’s any left, keep it in the fridge to savor later, when it will remind you of the pleasant moments spent in the kitchen. This recipe is perfect for sharing with loved ones, bringing joy and flavor to your table.
