We start by preparing the baking pan, which will support our wonderful cake. Use a round pan with a diameter of 23 cm and a height of 6 cm. Lining is essential to prevent the dough from sticking. Place parchment paper on the bottom and sides of the pan, then brush everything with melted butter, making sure it is evenly distributed. Sprinkle a mixture of breadcrumbs and granulated sugar over the entire surface to form a delicious and crispy crust.

Now, let's take care of the poppy seeds, the main ingredient of the filling. Scald the poppy seeds with boiling water, letting them sit for a few minutes, then drain them well. Boil the poppy seeds with 100 ml of milk, stirring continuously until the liquid evaporates completely. Allow the mixture to cool, and in the meantime, add the cleaned and washed raisins, 5 tablespoons of breadcrumbs, a teaspoon of ground cinnamon, and the grated lemon zest, which will add a special fragrance.

Now we prepare a delicious syrup from 5 tablespoons of sugar and 100 ml of milk. Boil the mixture until it thickens, then pour it over the poppy mixture, stirring well to integrate the flavors.

Separately, cook the noodles in salted water, following the instructions on the package. Once they are ready, drain them and rinse them under cold running water, leaving them in a colander to cool completely.

In a bowl, beat the egg yolks with 3 tablespoons of sugar until you get a whitish and fluffy cream. Add the melted butter and mix well. In another container, beat the egg whites with 2 tablespoons of sugar until you get a firm foam. Then, combine the drained noodles with the yolk cream, gently mixing to avoid destroying the texture.

In the prepared pan, add half of the noodle dough, leveling it evenly. Then, carefully add the poppy filling, ensuring it is evenly distributed. Cover with the remaining noodle dough and level again.

Preheat the oven to a medium temperature and place the tray inside. Bake the cake for about 45 minutes, until it turns golden and firm to the touch. Once baked, let the cake cool in the pan, allowing the flavors to settle and intensify. This delicacy is perfect to be served warm or at room temperature, offering an explosion of flavors and textures.
