Syrup: In a pot that you can swirl, combine all the ingredients for the syrup over low heat. This is an essential step as you need to make sure the sugar melts evenly without allowing the mixture to boil. This will help to get a smooth and consistent texture to the syrup. Once the sugar has completely melted, allow the syrup to simmer gently for about 3-5 minutes, then remove from the heat. Allow to cool slightly before using to preserve its delicate flavors.

Cake: Start by preheating the oven to a moderate temperature, around 180 degrees Celsius. Prepare a deep baking pan, about 20 cm in diameter, line it with baking paper and brush with a little butter to prevent sticking. An important step is to dissolve the coffee in hot water, making sure it is well stirred to intensify the flavor of the cake.

In a large mixing bowl, start beating the eggs with a mixer until you get a thick and fluffy custard. Gradually add the sugar, continuing to mix, until it dissolves completely and the mixture becomes smooth. Now, in another bowl, si sift the cocoa and flour together with the baking powder, making sure no lumps remain. Add this dry mixture to the custard, along with the melted and cooled butter and dissolved coffee. Mix with a spatula or mixer on low speed until all the ingredients are well integrated and the mixture is smooth.

Pour the mixture into the prepared pan, making sure it reaches the bottom of the pan and up the sides evenly. Place the pan in the preheated oven and bake for about 30-40 minutes, or until the cake is cooked through and passes the toothpick test. When done, remove the pan from the oven and let the cake cool for 5 minutes. During this time, save 1/4 of the prepared syrup, and carefully pour the remaining, still warm, over the cooled cake. This will allow the cake to absorb the delicious flavors of the syrup.

Once the cake has absorbed the syrup, invert it onto a wire rack and remove the baking paper. Place the cake on a platter and allow to cool completely. Serve the sliced cake drizzled with the reserved syrup, and for extra flavor, whipped cream can be added on top. This cake will prove to be an exquisite dessert for any occasion!
