Marvelous Chocolate Cheesecake
The crust: In a large bowl, mix the flour with the cold butter, cut into cubes, until a texture similar to fine breadcrumbs is achieved. This step is essential to ensure a perfect consistency of the dough. Then, add the sugar and egg yolks, mixing well to obtain a homogeneous composition. Once the ingredients are integrated, add the cocoa, bringing a note of flavor and rich color. Finally, gradually incorporate the milk until a firm but elastic dough is obtained. This will be the delicious base of our cheesecake.
The obtained dough is rolled out to a sheet about 1 cm thick. It is important to ensure that the sheet is even so that it bakes uniformly. The pan, with a diameter of 24 cm and a removable bottom, is lined with this dough, taking care to place it as evenly as possible on the bottom and edges of the pan. After completing this step, the pan is placed in the refrigerator for 30 minutes. If you feel that the dough is too much, you can use the surplus to prepare some delicious cookies, which will make a perfect accompaniment to the cheesecake.
The cream cheese: While the dough cools, we can take care of the filling. In another bowl, mix the cheese with the sugar until the latter is completely dissolved. It is important for the cheese to be at room temperature to homogenize well. Then, add the other ingredients, except for the chocolate, taking care to mix well. Finally, add the chocolate cut into small pieces and mix gently, so as not to melt it completely. I like to see the pieces of chocolate in the cheesecake, so I was generous with the chocolate.
After 30 minutes of cooling, place a baking sheet over the dough and add some weights to keep it flat. Place the pan in the preheated oven at 180 degrees for 10 minutes. After this time, remove the weights and leave the dough in the oven for another 10 minutes until it becomes slightly golden. After obtaining a perfectly baked crust, remove the pan from the oven and reduce the temperature to 150 degrees. Now, pour the previously prepared cream cheese and leave it in the oven for 40 minutes until it sets.
The chocolate glaze: To prepare the glaze, gently heat the liquid cream and pour it over the pieces of chocolate and butter. Mix gently until completely homogenized. It is perfectly normal for it to seem very liquid at first, but don’t worry, it will harden once it cools. After the cheesecake has completely cooled, pour the glaze over it, knowing that it will set on the delicious surface of the cake. I regret that I did not capture images of the intermediate steps, but the recipe is so tasty and easy to make that it is worth sharing. For the cream cheese: 600 grams of cream cheese, 100 grams of sugar, 3 eggs, Zest of ½ lemon, juice of one lemon, 1 teaspoon of vanilla essence, 150 ml of liquid cream, 50 grams of finely chopped chocolate, 2 tablespoons of flour. For the chocolate glaze: 130 grams of dark chocolate, 100 ml of liquid cream, 30 grams of butter.
