To create a delicious and sophisticated dessert, we start with a cocoa base that will enrich the flavors and add a touch of elegance. The first step is to mix 50 grams of cocoa with granulated sugar and a suitable amount of water. This mix will be placed on the heat, stirring constantly, until the mixture thickens. It is important to achieve a velvety texture, which will enhance the chocolate flavor. Once the mixture has thickened, we will set it aside to cool.

In the meantime, we prepare the cream. In a generous bowl, we cream the butter at room temperature with powdered sugar until we obtain a fluffy and homogeneous mixture. This step is crucial, as well-beaten butter will provide an airy texture to the final product. Then, we add the 6 egg yolks, one at a time, ensuring that each is well incorporated before adding the next. When the cream becomes smooth and homogeneous, it is time to add the cooled cocoa, mixing until fully incorporated.

Now, the obtained mixture is divided into two parts: 3/4 of it will be placed in the refrigerator to set, while in the remaining 1/4, we add 2 tablespoons of flour and the 6 whipped egg whites. It is essential that the egg whites are well beaten until they form a stiff foam to ensure a fluffy texture. We carefully combine the ingredients, gently folding to avoid deflating the egg whites, until we obtain a consistent mixture.

This mixture is poured into a baking pan lined with parchment paper and placed in the preheated oven. The baking time will be about 30 minutes, but it is good to check the cake using a toothpick: if it comes out clean, then the cake is ready. After removing it from the oven, let it cool completely.

To finish the dessert, the cooled cream will be spread evenly over the cake, or alternatively, you can cut the cake in half and fill the middle with the delicious cream. Served plain or with a dollop of whipped cream, this dessert will surely impress with its intense chocolate flavor and fine texture. Enjoy it with pleasure!
