To prepare a delicious apple puree, start by grating an apple. Then, place it in a saucepan over medium heat, stirring occasionally, until the juice has evaporated, a process that takes about 10-12 minutes. This essential step will give you a delicious puree, but you can also opt for apple jam, considering that it will make the cake sweeter. Once you are done with the puree, preheat the oven to 180 degrees Celsius, getting ready to bake a flavorful and moist cake.

In a large bowl, combine the honey with 1/3 cup of melted butter, mixing well until you obtain a homogeneous composition. Add the eggs, then the apple puree and mix again to integrate the ingredients. Continue by adding the vanilla and soy milk, which will enrich the flavor of your cake.

In another bowl, mix the flour with the starch, a teaspoon of cinnamon, and a pinch of salt, ensuring that the dry ingredients are well combined. Put the mixture of dry ingredients over the wet composition and beat everything until you obtain a homogeneous dough. Use a detachable bottom pan, with a diameter of 20-25 cm. Line it with baking paper, grease the paper with butter, and then sprinkle a little brown rice flour (or white, if you prefer).

Pour the dough into the pan and prepare the apples. Peel them, slice them thinly, and arrange them neatly along the perimeter of the pan. This presentation will give the cake an attractive appearance. In a small bowl, combine the remaining two tablespoons of butter with a quarter teaspoon of cinnamon and use a brush to coat the apple slices in the pan. Bake the cake for 30-35 minutes or until it passes the toothpick test.

It is recommended to serve the cake cold, as its texture will become more pleasant. Due to the use of rice flour, it will be slightly crumbly when warm, but not excessively so. It has a much denser consistency than cakes made with wheat flour. Before serving, you can dust it with fine sugar for an extra touch of sweetness and an elegant appearance. Regarding nutritional values, each serving contains approximately 202 calories, 19 g of fat, 7 g of protein, 34 g of carbohydrates, 4 mg of cholesterol, and 282 mg of sodium.
