Fluffy Cocoa Cake
To prepare a delicious cake, we start by carefully separating the egg whites from the yolks, making sure that no yolks mix into the whites at all. This is an essential step, as the whipped egg whites will add air and lightness to the final composition. In a clean bowl, we will begin to beat the egg whites with an electric mixer on medium speed, gradually adding the sugar. We continue to beat until the egg whites become a firm, glossy foam that forms peaks when we lift the mixer’s beaters.
Meanwhile, in another bowl, we will whisk the yolks with a pinch of salt, oil, and vanilla sugar. This combination will create a rich and flavorful base for our cake. We mix well until the composition becomes homogeneous and light in color. After obtaining a firm foam of egg whites, we carefully add the yolk mixture, mixing with a wooden spoon using a gentle up-and-down motion. It is essential to keep the air in the batter to achieve a fluffy and light cake.
After integrating the two mixtures, we will add the flour, which has been previously mixed with the baking powder. We will add the flour gradually, carefully integrating it until we obtain a uniform composition. Meanwhile, we prepare the two loaf pans, lining them with parchment paper to prevent the cake from sticking. We divide the batter evenly between the two pans.
In a small portion of the batter, we add cocoa and rum essence, gently mixing until the cocoa is fully integrated. This combination will add a deep flavor and a color contrast to our cake. We then pour the cocoa mixture over the batter in the pans, using a spoon to gently fold it into the batter with an up-and-down motion. This way, we achieve a very attractive marbled effect.
If desired, we can also add some chocolate chips or raisins to the batter for added texture and flavor. Once we have finished preparing the composition, we place the pans in the preheated oven at a temperature of 180 degrees Celsius. We bake the cake for about 30-40 minutes or until a toothpick inserted in the center comes out clean. Once the cake is baked, we let it cool in the pan before transferring it to a rack to cool completely. Enjoy this delicacy with your loved ones!
