To prepare a delicious and attractive dessert, we start by making the starter, an essential aspect in achieving the ideal texture. In a clean bowl, we add fresh yeast, to which we will add about 100 ml of lukewarm milk. It is important that the milk is only lukewarm to activate the yeast without destroying it. Then, we begin to incorporate the remaining milk and 2-3 tablespoons of flour, one at a time. We mix the ingredients well until we obtain a homogeneous composition, which will be left to rise in a warm place, away from drafts, for about 30 minutes or until its volume doubles.
After the starter has risen, we take care of the other ingredients. In a large bowl, we put the sifted flour, add the activated starter, soft butter at room temperature, sugar, a pinch of salt, egg yolks, and vanilla and rum essences. We mix all the ingredients with the help of a spatula or with our hands, then we start to gradually add the lukewarm milk. It is essential to knead the dough until it becomes soft and elastic, but not sticky. Once obtained, we cover the dough with a clean towel and let it rise for an hour or until it doubles in volume.
After the dough has risen, we sprinkle flour on the work surface and divide the dough into four equal pieces. We take the first piece and roll it out with a rolling pin, forming a thin sheet. We place a sheet of baking paper in a tray, then put the rolled-out sheet on top. On top, we add Finetti, which can be easily melted in a pot of warm water for easier spreading, making sure to leave the edges bare. We repeat the same process with the other pieces of dough, alternating the sheets and the Finetti filling until the last layer remains plain.
In the middle of the assembly, we place a glass to create a guide. With a sharp knife, we cut the dough into quarters, and each quarter is divided in half, resulting in 16 slices. We take two slices, twist them twice, then lift them gently and press the ends together, forming a small ball. These balls are left to rise for 10-15 minutes, covered with a towel.
After they have risen, we brush the surface with egg white for a beautiful color when baked. We preheat the oven to 180 degrees Celsius and bake the dessert for about 30 minutes or until golden. Once it is ready, we let it cool completely before serving. This recipe is not only a treat for the taste buds but also a true visual delight. Enjoy!
