Cookies with Candied Fruits
To prepare a delicious crispy snack, we start by mixing the soft nut well with a pinch of salt, sugar, and vanilla flavoring. This mixture will become a fluffy white mass, a true delight that will add flavor to the entire recipe. It is important to ensure that the ingredients are well integrated so that the final texture is airy and pleasant.
Once we have obtained a homogeneous composition, we add the flour and cornstarch (maizena). These ingredients are essential to give structure and achieve the perfect consistency. We mix well with a spatula or wooden spoon until the flour is completely incorporated and there are no lumps.
After reaching this stage, it is time to add the almonds, pistachios, and hazelnuts, chopped finely or left whole, depending on preferences. These nuts will add a crunchy texture and wonderful taste to our composition. We continue to mix well, being careful to distribute the nuts evenly in the dough.
Almost at the end, we add the candied fruits, which add a touch of sweetness and color. These can be candied cherries, apricots, or any other preferred type. An irresistible combination of flavors begins to take shape!
Once everything is well mixed, we take a piece of plastic wrap and transfer the composition, forming a log. We roll this log tightly to maintain its shape during baking. We place the log obtained in the freezer for 30 minutes to an hour to harden well.
After the cooling time has passed, we take the log out of the freezer and cut it into slices about 2-3 cm thick. These slices are ideal for baking, providing a crispy texture on the outside and soft on the inside. We place the slices on a baking sheet lined with parchment paper, so they do not stick.
We preheat the oven to 200 degrees Celsius and insert the tray. We bake for about 18 minutes, but it is important to monitor the baking closely, as each oven may have its peculiarities. When the slices become golden and emit a delicious aroma, they are ready to be taken out.
We let them cool on the tray for a few minutes, then we can serve these aromatic goodies. These cookies are perfect to be enjoyed with a cup of tea or coffee. Enjoy your meal!
